I have a turkey breast roasting in the oven. The cornbread dressing is staying warm in the microwave. The raspberry walnut broccoli slaw is marinating in the fridge. The baby lima beans are cooking on the stove. The low sugar pumpkin pie and sugar free Cool Whip are defrosted in the fridge. I still have to make the gravy, lemon parmesan asparagas, and the garlic steamed green beans.
If you can't tell from the menu, Gabby is on a diet and I am trying to decrease my sugar intake due to being boarderline diabetic. It's a different sort of Thanksgiving meal, but the house smells just as heavenly as always.
I cheated and bought a frozen cornbread dressing. I can never make the stuff from scratch without making enough to feed 20. It's wonderful stuff, but since we didn't do a pot luck at work and it's just the two of us this year, it just didn't make sense to make it....plus, we don't need all the leftovers. I did use an organic raspberry walnut salad dressing on the broccoli slaw. I tasted a small bit of it last night, it's sweet, but not too sweet. It wasn't loaded with sugar, but there is some in there. As for the rest of it, I am working on using as little salt as possible, with the exception of the turkey. I brined it. If it turns out just half as wonderful as the one last year did, we are going to have a great little bird!
Ok, I just wanted to take a little break while the bird roasts before I got into the last minute veggies. We are having a late lunch/early dinner. I can't wait to get it all done and on a plate. I love Thanksgiving! It's a lot of hard work and planning, but it's always a wonderful meal.
