My DH is the same way. He always says if there is something that I like (since I am the sole planner) then book it. Afterwards he and I will discuss if it is worth keeping or not, don't worry we don't double book.
To the OP....a similar situation happened to me....I have been looking for a Le Cellier dinner for 12/4 and cannot get one at all. I finally found one for 8:15pm and clicked on it (or I thought I clicked on it)....instead of adding to my cart, I instead modified my search. By the time I figured out what had happened, the ADR was gone ....needless to say, I can't find another one

Well, I mean in your defense, why wouldn't you listen to Prince Charming? Here's hoping you find a cancellation.
I have had some luck this trip with just quick checking for reservation availability a few times a day, whenever I can. If it pops up, though, I grab it.
And whatever happens, hey, you'll be at WDW, so have a great trip!
At the 45 day mark of final payment there are cancellations for entire trips. Those same people still made their 90 day plus 10 dinner reservations. This is probably the best time to check for cancellations. It's especially true of reservations that need a credit card hold.
I think (I don't know) all dining reservations if connected to resort confirmation are cancelled automatically if the trip is cancelled. The 45 day mark is like do or die.
Keep trying everyday and magic does happen anyway.
