This may be a dumb question, or already answered somewhere, but is there typically a "high" season for DCL where prices are higher and also "off" seasons, where they are lower?
Is this information listed anywhere or does it typically vary from year to year depending on demand?

As you would expect, any holiday times (spring break, summer, thanksgiving/christmas) are the most popular on DCL. And the addition of the Star Wars itineraries has lengthen the spring break time on the Fantasy.

While the rest of the year may be marginally lower in cost, DCL is typically much higher than a similar cruise on another line at any time.

Basically when the schools are normally out is when the prices for cruising are higher.
 
You want the cheapest it's usually in September. Kids just back in school and the height of hurricane season.
