Barb - oh my goodness, you have been through a lot. I'm sorry for your loss. How are your kids doing with it? Poor Jaymee, is she feeling any better? Is there anything you can do for ovarian cysts or do you just have to let it go away on its own? It was probably good for all of you to go to dinner on Ethan's birthday, even though Missy didn't want to do it.

Mom - Call me when you get up and I can help you with Fiddler's. You can pay $176 for 2 tickets through the website, we can try and call 303-893-4100 to try and get 2 tickets for $80, or we can go with Craigslist and someone is selling tickets for great seats (better than the website $176) for $150.

Julie, I was working on a WW thing for Heidi and came across this recipe. I haven't tried it yet but I absolutely love Migas.

This version of the Tex-Mex favorite is a fork-and-knife affair, the egg yolk running into the green salsa for an unbeatable combination.


Ingredients

4 large egg(s)
4 medium corn tortilla(s)
1/2 cup(s) salsa, green variety (salsa verde)
1/2 cup(s) cherry tomato(es), diced
1 Tbsp fresh oregano, minced
7 Tbsp queso asadero Mexican cheese, shredded
1 tsp chili powder

Instructions
Bring a large, wide saucepan or high-sided skillet of water to a full simmer over high heat.


Reduce the heat under the water to low so that the water is at the barest simmer. Crack an egg into a custard cup or a teacup, then gently pour it into the water. Repeat with the other 3 eggs, keeping them as far apart in the pan as possible. Turn off the heat, cover and set the pot aside until the whites are firm but the yolks are a bit runny, about 5 minutes.


Meanwhile, set a skillet over medium heat. Add the tortillas one at a time and cook until warm and pliable, turning once, about 45 seconds per side. Transfer them to 6 serving plates.


Top each tortilla with 2 tablespoons salsa verde. Divide the diced tomatoes and oregano evenly among the tortillas. Divide the cheese among the tortillas.


Use a slotted spoon to pick up the eggs one by one, letting the excess water drain off. Set the eggs one by one on top of the prepared tortillas. Sprinkle each with 1/4 teaspoon chili powder. Yields 1 topped tortilla and 1 poached egg per serving.
Notes
For the best taste, look for these Mexican cheeses: queso Chihuahua (a creamy, white or pale-yellow cheese) or queso asadero (a mild, melty cheese).

Good morning. Today is my Friday and I am so glad for that. I read on FB that Denine's vacation is coming to an end, sounds like they had a great time. No plans for Friday, Saturday I will be going to a friend's graduation and Sunday is Mother's Day!!!

Mom - What are you doing tomorrow? Are you going down to the campground?
 
Good Morning/Afternoon

Taking a quick minute to post so it is not several weeks before you hear from me.

Its my Friday and it has been dragging since 6:01 this morning. Ready to go home. Only 6 hours left!

The kids are doing ok with Florences passing except for Missy. She still crys when she talks about it. I am going to make meals twice a week and Missy is going to take them to Mervin on Tuesdays and Thursdays. He is got to be the sweetest man I have ever met in my life. I love him dearly and it makes me so sad to see him so sad. He never complains about anything. Glad Missy will be spending time with him. Bob and I take both kids now to Villa. Kara is still not sure she wants Bob to leave her in the kid area. Hopefully she will get use to it.

Been trying to make cream cheese mints for the shower this weekend. I can not get them out of my molds. I have buttered them and they still stick. I made 150 mints for Jason's wedding and they all came out. Not sure what to do.:confused3

Got flowers at work today from Bob. SOOO Pretty!

It has been such a treat to see Barb posting again. Please keep it up. You are missed when you don't. I love cream cheese mints but I have never made them or had the courage to do so.

Heidi, I don't think that we are going down to the campground because it's going to get pretty low one night here in Denver so I can just imagine what it would be like in Monument. We would have to keep the heat running and not sure if that is financially responsible. Might know more tonight when you are here. Talked to Oatie today. She is in severe pain from her sciatic (sp) nerve. I am THINKING about sending a little flower arrangement. She seems pretty down.

Nothing fun going on here today. Stopped by the Hallmark store for a few cards and walked the mall. That's it. Now it's laundry calling my name. Yuck.

Haven't heard from Susan in awhile. Hope she is ok.
 
It's crazy. The news is on and saying we can expect snow by the end of tonight. Good grief, it's SPRING. The more I think about it, I think that camping this weekend is a dumb idea. Brrrrrr Oh but we have the fireplace to keep us warm, LOL.
 
We are home. I haven't read anything yet, so I have a lot of catching up to do.

We are expecting strong storms tonight and high winds and then it gets cold. Welcome Home!

We had such a relaxing vacation. We spent more time at the pool than we have in the past. We spent a lot of time just watching the animals from our balcony at Kidani Village. We enjoyed 2 Epcot wine evenings with Owner's Locker. Barb, you really need to get 1! It is enjoyable to sit and talk with other Disney nuts! Jerry and I had dinner out twice. Kaleigh loves Simbas and the Neverland Club. NLC is her new favorite club. We booked the pirate cruise for Kaleigh, so we had 2 hours to sit by the pool and read. We were both so stressed before our trip. I hope the effects of vacation last for a while.

I found out today that my mom got a new kitty. I am so happy for her. Her last one, which wasn't very nice, died a few years ago. She has been wanting another so badly, but didn't think she could handle a cat and my dad. She just went ahead and got one. It sounds perfect! It's name is Ming. She decided to keep the name. She is a 2yo black kitty. My mom sounded happier than she has in a long time.

When we get the pictures on the computer, I will post them on FB.
 
Today we need to unpack. We just didn't feel like it yesterday.

We had some nasty storms last night. One lightening strike was too close for comfort. It sent a power surge through the house and caused the smoke alarms to go off. Kaleigh was in her room and heard them and started screaming. She thought there was a fire. So, we had to reassure her and let her sit up a while before going back to bed. We are under a high wind warning now, but that is better than a tornado watch. Thank goodness for surge protectors! We unplugged the computers though knowing the nasty storms were coming.

Kaleigh has missed two baseball practices. We found out too late that she had practice last night. Her coach never got back to us in time. The other we were still in WDW for.
 
Happy Mothers Day! I had a terrific day. Heidi took us out for one of the best brunches in Denver and that was a lot of fun. She also gave me a diamond palm tree necklace. It's funny because I saw one in MX that a lady was wearing and came home and told Heidi that I wanted one. Unknown to me, she had already bought one for me not knowing I wanted one. I tell you, that girl KNOWS her mom! Heidi, LYMI and thanks so much!! I am now at Stacey's spending the night. I will watch Joey tomorrow when Tyler goes up to Childrens hosp in Denver for his spinal tap.

Today is our fisrt official day of "summer" vacation. We are off to the library soon.

Going to take a few minutes off the phone and post. everytime I start I get a call.

Denine-Sounds like you had a really nice vacation. I agree I really need to get a owners locker. I was going to last December but the packing of all the stuff I would need to bring got to overwhelming so I quit. We are going in September so maybe I will get it together. I would really love one! What is the "Pirate Cruise"? How do you sign up for it? I bet Ethan would love it!

I have such a headach today. Already took Advil and it didn't even touch it. Had it all day yesterday too. BLAH!

Had a fun Mothers Day. Kids sent me a dozen chocolate covered strawberries that were made up to look like roses and a cute teddy bear. They are also getting me a book written by my pastors wife can't wait.

What is going on with Tyler? I have no idea never did find Sandys post. Hope everything is ok.
 
Hi guys, home from Stacey's. What a diifference about 45 miles make. It was cold and terribly windy. Get home it's a little warmer and not as windy.

Barb, Tyler's white blood cells have been waaaayyyy low since his hospital stay so they took him off one med. They decided to do some tests. His MRI of the brain came back with brain damage. Today was a spinal tap to check further why he isn't seizure free. Thanks for asking. Hugs. I find it odd that you had a headache yesterday and today. I woke up with one at Stacey's. Wondering if it's something in the air! Joey and I went to Target today at Union and Powers. That is such a nice store.

Denine, it's nice to have you back and posting. It was mighty quiet here. It is definitely summer when you start the library program!

A big snowstorm is expected to hit us. I know Stacey is expecting a foot and I haven't heard how much here other than measurable. We shall see. I think it starts tomorrow afternoon.
