Now going to the parks what should i do

SO my original plans got scraped and we are staying an extra day at POFQ from February 26th to March 2nd. (We are going to the Daytona 500 for my 40th) Which means that we get 3 days in the parks instead of the 2 days that we were planning before. My original plan was to utilize extra magic hours and go to Epcot 2/28 & Magic Kingdom 3/1 (that included a BOG reservation) Now since we scrapped plans to go to Sarasota after the race I wanted to take my wife to the Epcot Garden festival. So here are my questions since I have a tendency to ramble.

1. Is the Garden Festival worth it... My wife doesnt really care what we do lol but I think that she would enjoy it.

2. Are monday MK crowds bad and will it be crowded TP rates it at a 7 ?

3. Since we are staying and playing an extra day does EMH matter ?
