Not Disney Vacation..... Can we do it?

We love all inclusives!! We've done 4 so far, one of which was adult only - El Dorado Seaside Suites in the Riviera Maya. Heavenly! This year we are doing Disneyland, next year we are doing another All Inclusive (probably Puerto Vallarta) for our 10th wedding anniversary.
 
DH and I usually do a beach vacation without the kids every year. Most recently was Sandals Emerald Bay last November and Sandals Whitehouse last month.

I agree with some of the pp about St Lucia. Beautiful island , we loved it . DH and I stayed at sandals La Toc.

Couples recently opened a resort on Barbados. Sandals in Grenada. Both resorts have me intrigued but we're taking the kids to Hawaii next year from PA so DH and my beach vacations will be a distant memory for a while.
 
How do most people book AI's? I've only booked one years ago through an online agency I can't even remember.

I'm a Costco member but have never used their travel.
 
We do an AI every year for Christmas. We have been very happy with Iberostar. I do use a travel agent for this as she has a relationship with the hotels and has been able to get us some "perks" (a little better room location, welcome gifts etc) Since I do this with my mother the bed "issue" is the main reason for a TA. I want someone who will work with the hotel to make sure we have TWO beds :)
