We’re going to have 2 non-park days when we’re at DL for race weekend. Any recommendations on what to do those days? We won’t have a car.
 
Who is we? Adults? Kids? Ages? Have you been to So Cal before?

Have you looked into something like whale watching out of Newport Beach?
 
If I am near an ocean, I always want to go to the beach no matter the weather. There are hikes, restaurants, tide pools and nature-center type places you can enjoy even on cold days.
If you do not have a car, maybe you do not want to mess with renting one for the day or using a ride share, but that would be my first choice, even in the winter.
If you just wanted to stay in the immediate area, you could really focus on the offerings right there like tours, classes and movies at the Disneyland Resort Hotels. There’s also live music around Downtown Disney, and I’m currently seeing some Lunar New Year entertainment on the schedule at the Grand Californian. Unfortunately, I cannot see race weekend particulars right now.
You could also do a fun character breakfast, have a good dinner at a place like Din Tai Fung or do a self directed “food tour” with small plates, drinks and desserts at different spots around Downtown Disney District.
If there are fireworks in the evenings of your non-park days, you can watch them from the Esplanade or other spots for free.
 

Few other ideas not mentioned yet. Most will be a fairly quick Uber ride away.

- Medieval Times Dinner Show
- Outlets at Orange - open air mall with restaurants, movie theatre, skate park
- Camelot Golfland - mini golf, go karts, bumper boats, arcade, etc.
- Discovery Cube - hands-on science museum
- FlightDeck at GardenWalk - racing and fighter pilot simulators
- Anaheim Packing District - Upscale food court with local vendors & bars in a renovated, historic 1919 citrus-packing house

Anaheim Packing District is about 6 stops away by public bus, very easy and a nice way to spend a couple of hours-great choice of food as well
 
If you want to go further afield without the hassle of ride share, Anaheim Tour Company does trips into LA , the beaches , Universal etc. We did 2 trips with them last time and I cannot rate them highly enough-super-friendly tour guide/drivers and you see lots.

There are quite a few sightseeing companies based within the Anaheim area who can take you around - the tours include transportation when going to LA. Best keep an eye on the leaflet boards in the hotels and around.
