Non-park recreation ideas for 7 and 15 year old

Take the boat transportation to all different resort areas - most kids find boats entertaining (I know I always did). You can boat from MK to all of the MK area resorts and Fort Wilderness. You can boat from DHS to the Epcot area resorts and Epcot. And there are boats between Disney Springs and Port Orleans, Old Key West, and Saratoga. You don't have to go into the parks to take the boats.

If the kids can stay up to evenings around 10ish, go see Yehaa Bob at Riverside...fun show and singalong.

The Boardwalk has street entertainers periodically throughout the day and evening with magic, juggling, skip rope, and other entertainers.

As mentioned, Animal Kingdom lodge has the animals to enjoy. And the horse stables at Fort Wilderness are always lovely to visit if the kids like horses.

Yacht Club has a Christmas miniature village, and Beach Club has a gingerbread carousel. In fact, I often do resort Christmas crawls when staying there in December as each resort has its own unique decor and theming, different displays, some serve Christmas snacks, hot chocolates, etc. Wilderness Lodge is always a favorite at Christmastime. As is Fort Wilderness, as many of the 'regulars' set up great Christmas light and decor at campsites - you can free-walk around to see them, or do the Sleigh Ride which will take you through some of the well decorated loops.
 
Be aware there are two very different courses there. The Gardens is the usual mini-golf course with obstacles. The Fairways course is more traditional golf, with par-3 and par-5 holes. We accidentally played the Fairways once and gave up early - it was just too hard!
Right, it was the gardens course my kids liked. They wanted to try the fairways, but we never got back to it. When they were younger they enjoyed Winter/Summerland too, but I found too many things not working on that course.
