New to the world of Celiac Disease - Week 1 update on page 2

Thank you both for being so kind and supportive. It really helps to be able to come here and talk about it.

I'm excited to go to WDW knowing they will take care of me. Yesterday I emailed my form to them and within 10 minutes I had a response that they send it to all of my restaurants. About 5 minutes after that I started getting emails from the chefs. They are all so awesome! I even attached to it what I had selected at each restaurant in case it wasn't safe so they could direct me to something that was or make adjustments if it is easy to do so.

Even the head chef from Hollywood Studios responded about having me a safe salad at Toy Story Pizza Planet since I can't have melons. It almost makes you feel special instead of like a freak.

They make you feel quite special at Disney. It's wonderful! In fact, I once made the comment that I was the weirdo in the bunch, and the chef made a point to say that "you are not weird. You have special dietary restrictions and I want to help make this a great meal for you." That was really nice.

It sounds like you are going to have a great trip! and Good food! Again, i can't wait for a report :banana:
 
Not only have we never been made to feel like freaks at WDW, the chefs usually make us feel like it's their pleasure to make special foods for us. I don't know if they actually do feel that way, but they generally make a point to make us feel that way. Many of them have chatted with us and tell us about family members or loved ones of theirs with similar types of restrictions/allergies/intollerances. We've come to realize that for many of the chefs at WDW, they choose to work for Disney because they have a passion for cooking for those with our kinds of restrictions and they know that Disney encourages this.

For stuffing, what I do is I keep a ziploc bag in the freezer and with each loaf of bread we go through, I take the heel and add it to the ziploc. This bag of heels is what I use to make my stuffing. Once the bread is soaked and seasoned and cooked, it's hard to tell from stuffing made from regular bread. Stuffing works best with dense or even stale bread so gluten free bread is great as stuffing.

Unfortunately, your reaction is similar to every person with celiac I've even spoken with. We just can't have even that one bit. I also know that this type if experiment with the "just one bite" is something we all have to experience as well. It helps to re-enforce why we remain so strict to this lifestyle. Hopefully you learn faster than some of us who had to go through it several times only to suffer each time. Yup, some of us had to do it to ourselves many times to get it through our thick skulls. Hopefully you're smarter than I was. LOL
 

Thanks! All it takes for me was this one time. I'm NOT going to do it again. We have the top tier from our wedding cake in the freezer that we should have had two weekends ago but I was afraid to take it out. I'm glad we didn't. I guess my husband will have to eat it all by himself. :sad1: It just isn't worth the pain.

I know they won't make me feel like a freak at WDW. They make you feel special in a good way.

Does anyone know if you can find the GF blueberry muffin anywhere there? I saw in it someone's review of their resort breakfast. I'd love to try one but we won't be at their resort.

We got a bread machine so we can start playing with recipes to see what we can come up with that I will be happy with. I'd really like to find a good sourdough recipe.

The chef at Pop Century got a package of Kinnikinnick blueberry muffins to try when we were there. He had been at a food fair and thought he'd try a few of the gluten and dairy free products since he knew there was a family who would love to try it. I got to be his guinea pig. It was great!!! He also got in some Silk yogurt. I was in heaven that morning for breakfast. I believe that now any of the resort chefs can get them in if you request with advanced notice but I'm not so sure they're carried as a regular item.

The chef at Akershus made my daughter chocolate chip muffins last year. He had called me at home to find out what she'd really like and I mentioned that any kind of baked good with chocolate would make her really happy. Yes, the brownies are everywhere and they're delicious but the options are very limitted so it was so special that he made these.

Thanks! I'll have to check out the website for more info on the muffins to see if I can have them. Because of my allergy to eggs there are a lot of gluten-free items that I still can't have. I know about those brownies but I can't have them because they have egg in them. I'd like to try the CP brownies but since they are closed during our visit I was wondering if anyone else would be making them.

Sadly the muffins are made with eggs. Oh well, it was nice to dream.

Has anyone seen the new Hardee's commercial? That's how I'm feeling.
