Is the new star Tours open yet? Going to be there this weekend.

Yes...the new scenes in Star Tours officially debuted yesterday with the start of the Season of the Force.

No "reviews" yet here? Was it supposed to be only 1 fixed scene that is played at every showing or would we have to try multiple times to see all the new stuff?

We went twice and got the desert planet both times. Not sure if there's another new scene. It was cool. I won't give any spoilers here, though.
