I hope that the food selection at the new Paddock is better than the Artist Palette. Maybe will will also be quicker to get food too.

It is supposed to be different. More hamburgers and hot dogs, I believe.
Opening dates I got from staff was anywhere from late May to July 4th.
As for distance, the Paddocks pool is directly across the bridge from the Springs. Not a bad location. Adds make a couple extra minutes to your walk.
If you were going to DTD, I'd take either the ferry or walkway to West Side from this area. It's a shorter distance. Unless you just want to go to Marketplace. In that case, you take the ferry or walk via Congress Park.
The Paddocks pool will be most convenient to those in the Carousel, Paddocks (buildings nearest Springs) and the Springs. Grandstand folks may find it too much of a trek. Congress Park folks and that far distant section of Paddocks may prefer the Congress Park quiet pool.
It really all depends on your walking stamina. My chair can easily stroll all of SSR without it feeling long so it's hard for me to judge.
