Never been to US or IoA - Need Help!

We are going to be in the Orlando area 12/3 to 12/11. We are traveling with a party of seven: me, my dh, our two dd's (ages 3 and 8), my parents and my brother. We have visited Orlando before, but never made it to Universal, but this time we plan on it. So here are my questions:

1. We only have one day to spend at Universal. Should we try to visit both parks or just choose one? If we go to just one, which one would you recomend?

2. My mom is not a big thrill seeker and has no problem being the one staying behind with the kids if they aren't big enough to go on a ride. Is there areas she could take the kids to while we ride some of the rides?

3. My oldes dd is 8 and 48 inches tall (she is really small for her age), and absolutely loves thrill rides. Will she be able to ride a lot of the rides at US or IoA.
