Need Tomato & Cucumber Recipes

*** I buy the balsamic at our grocery store - it has a sour taste to it - I found a store that let you taste balsamic... COMPLETELY won me over!!

Yes! You get what you pay for when you buy balsamic vinegar!!! It is worth it to spend more and buy a little more expensive stuff, but good stuff tastes a little sweet. I watched a show a while back about Italy and they will actually put the stuff on their ice cream!!! I've also made strawberry vinagrette w/ balsamic & strawberries, and sweeten it up a bit w/ sugar or splenda.....it is REALLY good - those two ingredients are just made for each other.

We do the tomatoes & sliced mozz once a while too.......YUM.
 
Great snack..

Take an English muffin half, place a tomato slice on it, seasonings of your choice (maybe some oregano; garlic powder or salt; Italian seasoning; etc.), then add a slice of your favorite cheese, and stick it under the broiler for a few minutes.. Yummy and quick!

Have you considered making pickles with your cucumbers - or is that too time consuming?
 
Bread Salad is one of my favorite summertime salads, and it contains both cucumbers and tomatoes. In fact, it is on my menu to have this week, with grilled chicken. To make this you will need:

A baguette
Tomatoes (3-4)
Cucumber
Fresh basil (a good handful)
Fresh grated parmesan cheese or chunked feta
Olive Oil
Balsamic Vinegar
Salt (sea salt is preferred) and pepper

Take a baguette, and cut it into 1" cubes. Toss bread with a bit of olive oil, salt, and pepper in a ziploc bag. Transfer bread cubes to a cookie sheet and bake at 350 degrees until toasted. Cube some tomatoes and a cucumber into 1" diced pieces. In a large bowl, toss, tomatoes, bread, cucumbers, basil, and cheese. Add balsamic vinegar, olive oil, salt and pepper to taste; stir it all up. Let set about a half hour before serving to let all the flavors blend together, and for the bread to soak up some of the oil/vinegar.

You can add other ingredients to this, if you want: diced roasted red peppers, and Kalamata olives are great additions. Some roasted garlic is good in it too. Whatever floats your boat, and whatever you have on hand.
 
Doesn't include the cucumbers, but I saute garlic and onion in olive oil, add sliced squash and tomato and saute for a nice side dish. I'll add Italian seasoning if I remember.

I've tried to make pickles but the flavor and texture didn't quite work out.
 
Thanks OP for starting this thread we love tomatoes and cucumbers and the way we like to eat them the most is slice them both up along w/ a yellow or white onion put them in a tupperware container and sprinkle salt and pepper till my heart is content than I use a bottle of italian dressing refridgerate shake occassionally and eat often.
 
I love bacon and tomato sandwiches (better than BLT). Makes me think of summer. Bacon, Tomato, Miracle Whip and bread. Yummm!

For me its just tomato, mayo (Kraft) and white bread. Salt & pepper and I'm in heaven! I can't stand having to buy tomatoes at the grocery out of season. Yuck! We have 30 tomato plants and what we don't eat gets made into salsa and canned.

As for the cukes, we generally only plant 1-2 because we get run over with them, way more than we can eat. We still end up giving bags of them away to coworkers (city people--sheesh! ;) ), as well as yellow squash. I do like to use them for tzatziki, when we grill out kebabs.
 
tzatziki is Greek yogurt/cucumber/dill sauce. It is typically served with gyros, if you've ever had them or sometimes just as an appetizer/dip.

Another cucumber salad recipe! Mine comes strait from Greece. I spent a summer in Greece with my boyfriend's family and every night his mom would make a cucumber tomato salad. like this... sliced cucumber and wedges of tomato, thin slices on onion. Pour a good amount of extra virgin olive oil on it and sprinkle with kosher salt. Let it sit 1/2-1 hour so the salt can pull some of the juices out of the vegtables, that it! You seve it with crusty bread and use the bread to sop up the olive oil and juices. It is to die for. I wasn't too much into greek food so I ate a lot of cucumber and tomato salad! I serve it all the time to my family! Shh don't tell my husband (I didn't marry the Greek boyfriend!)
 
Tomatoes, cukes, black olives, onions, bell pepper cut up in a salad. Add some tuna (we have fresh canned tuna that my brother caught). A drizzle of olive oil and a loaf of Italain bread...........mmmmmmm!:thumbsup2
 
Tomato - Cucumber salad

Stir together 1 cucumber, sliced
1/2 small onion, thinly sliced
2 cups vine ripe tomatoes, cut into quarters
Add 1/4 cup newmans own olive oil and vineagar salad dressing
1/2 tsp lemon zest
1 tbsp lemon juice
salt and pepper to taste.
Toss to coat

Mine's a variation of the original since I use sour cream instead of yogurt.

1 pint low fat sour cream
1 cucumber
2 cloves garlic, crushed/minced
1/2 to 1 tsp dill
salt & pepper

Drain sour cream. To seed cucumber, peel and cut lengthwise. Scoop out seeds with spoon. Grate cucumber (I use box grater). Put in bowl and salt. This will pull the excess water from cucumber. Let sit 5 minutes. Drain off excess water and mix with the sour cream and remaining ingredients. Salt and pepper to taste. Let sit in fridge a couple of hours for best flavor.


Some people add lemon but I don't because I think the sour cream takes care of that need.
 
Personal favorite: Fattoush Salad

Diced Cucumbers & Tomatoes, Sliced Radishes, Slivers or diced Red Onion, Green Pepper seeded and cut up to taste, Romaine Lettuce and Toasted Pita Bread broken into bite size peices.

Dressing: Lemon Juice, Olive Oil, a garlic clove really minced and salt and pepper. The receipe calls for Sumac (not necessary, even though I really enjoy it)

Mix all the vegetables, add the dressing and stir. Put the romaine on top but don't mix it in till you're ready to eat. The vegetables soften a little and take on the taste of the dressing.

Once it's mixed, add crumbled feta on top! Enjoy
