Need Tomato & Cucumber Recipes

Our garden is coming in with a huge amount of tomatos and cucumbers and a few yellow squash. I need some recipes and ideas on different ways to serve them. Thanks.
 
I make a cucumber tomato salad - peel cucumbers & slice thin, then cut tomatoes into chunks (or cut cherry tomatoes in half). You can slice some onion in this as well if you like. For the dressing - sorry to say I never measure - but I mix sugar (I use sugar substitute) with vinegar, and add fresh dill or dill seasoning. We eat this a few times a week in the summer - it's so light & refreshing on a hot day.
 
I would check the Food Network website - I'm sure you will find lots of recipes there.

I love tomato and cucumber salad - my mom would boil water, vinegar, oil, sugar and spices and pour it over sliced tomatos and cucumbers and then chill it. YUM!

Also a tomato tart would be yummy - I don't really have a recipe - I usually will look one up online.

You can cut an x in the skin of the tomato on one end, parboil them to remove the skins and use the tomato for sauce.
 
I make one with tomatoes, cucumbers, onions, black olives, chick peas and mozzarella cheese. Just drizzle with olive oil and sprinkle with a little garlic salt. It is easy and super yummy!
 
Cucumbers in white sauce

Peel, slice thin, and lay on a paper towel to drain 2 cucumbers.

In a bowl mix equal parts mayonaisse and sour cream. (I use about 1/4 cup of each per two cucumbers). Add salt and pepper to taste. Mix in cucumber and chill.
 
Chop up and put with pieces of fresh mozzarella - pour over with olive oil/balsamic or an Italian dressing.

I make pasta salad all the time w/ black olives, tomatoes and cukes - use tri-color rotini pasta and all I use for the "sauce" is Good Seasonings Mild Italian. I use balsamic vinegar though, and use more vinegar than oil so it's not too oily. Yum!
 
Tomato, Cucumber & Pepper Salad

SERVES 6
ACTIVE TIME: 10 min MARINATE TIME: 15 min TOTAL TIME: 25 min

2 Tbsp Pure Olive Oil
2 Tbsp Italian Classics Chianti Red Wine Vinegar (or red wine vinegar)
1 large green sweet pepper, cored, seeded, 1-inch dice
2 cucumbers, halved lengthwise, cut crosswise into 1/2-inch pieces
1 small sweet onion, peeled, halved and sliced lengthwise in thin strips
3 large tomatoes, cut into 8 wedges
Salt and pepper to taste


Whisk oil and vinegar together in large bowl.

Add pepper, cucumber, onion, and tomato to bowl. Season to taste with salt and pepper; toss gently. Let rest 15 min before serving.
 
Fresh Tomato Puree

MAKES 1 1/2 cups ACTIVE TIME: 10 min TOTAL TIME: 10 min

3 medium (about 1 lb total) tomatos, halved
1 Peeled Shallot, rough chop
1 clove peeled Garlic, thinly sliced
1 tsp sugar
Salt and pepper to taste


Combine tomatoes, shallot, garlic, and sugar in food processor. Season to taste with salt and pepper. Process until smooth.

Strain through medium sieve or 1 layer of cheesecloth to remove seeds and skins.

Tip(s):
Can be made ahead and chilled.
 
We call this Greek summer salad--chunks of tomatoes, sliced cucumbers, sliced onions.Stir it up with olive oil & vinegar dressing and add feta cheese. Yummy! so fresh.

I also like to make raita. It's an Indian yogurt dressing. I like it best just served over a wedge of lettuce.

2 cups plain yogurt
1 tomato, chopped small
1 cucumber, chopped small
1 small onion, diced fine
3 TABLEspoons fresh cilantro, chopped fine
1/2teaspoon salt
1/2 teaspoon pepper
dash of cayenne

Beat yogurt until smooth. combine with the chopped tomato, cucumber, onion, and cilantro. Season to taste.
Cover and chill at least 1 hr before serving.
 
Tomato Cucumber Salsa
SERVES 4 ACTIVE TIME: 15 min TOTAL TIME: 45 min

1 medium (about 1/2 lb) cucumber, peeled, sliced lengthwise, seeded, diced small
1 tsp salt
1 jalapeno pepper (wear gloves) halved, seeded, diced very fine
4 large (about 3/4 each) tomatoes, diced small
3 Tbsp red onion, diced
4 Tbsp lime juice
2 Tbsp Extra-Virgin Olive Oil
2 Tbsp chopped fresh cilantro


Toss cucumbers in bowl with salt (will draw out moisture). Let set 30 min; squeeze, then drain water off.

Combine all ingredients in medium bowl.

Serve with chips and crisped pita bites...

Such blatant bragging needs to be moderated;) Do you think any of these recipes will taste as good with green tomatoes, as mine just won't turn red?

The tomato and cucumber salad sounds divine. I usually make bruschetta with my tomatoes and basil, but this year I've made several batches of pesto with my basil because the tomatoes won't turn. I am a big fan of tomatoes(chunked, sliced, or cherry tomatoes cut in half), chunks of mozzarella cheese, and basil, sprayed with Wish Bone spritzer salad dressing (Balsamic Breeze). When I make pasta salad, I use diced tomatoes and cucumber, black olives, and pimentos, with garden rotini, and a zesty Italian dressing. And I add basil(I'm seeing a pattern here). My best friend cans something called "cucumber relish" that requires cucumbers, onions, green peppers, vinegar, sugar, turmeric, 1 red pepper, and a few other spices...it is delicious. My youngest daughter eats my cucumbers before I have enough to make the relish, so I'm lucky my friend shares with me.

I then add 1 cup sugar, 1 cup of vinegar and about 2 cups of water and let the cucumbers and onions soak for at least 6 hours. After that, my Dh tastes them and lets me know if I need to add more sugar or more vinegar. The longer that they soak, the better that they taste. They've become such a hit with my family that my SIL asked me to bring them to her house for Thanksgiving.

I'm getting ready to make a big batch today so that they'll be ready for my DD's graduation party on Sat.

One warning, use either a glass or metal bowl because it's hard to get the vinegar smell out of plastic or Tupperware.
 
You guys are great I love every one of these.

If my DH had his way they would never get a chance to turn red, he loves green fried tomatos, I just can't eat them no matter what dressing I put on them.

They eat this a lot in Bulgaria. One of the things I miss.

They call it Shopska Salata. No way would I call it a Greek summer salad because it's a Shopska!!! LOL!

I make the same salad, but I prefer Feta to fresh mozzarella.

The pasta sald is another good one - you can throw in some diced ham or salami, too.

How about a tomato tart? I had a recipe from Gourmet a few years ago, but I don't have it handy. I am sure you can find one on epicurious.com
 
Now I have to go buy me some cucumbers to make these great salads. I especially like the Grek Salad. :cloud9:
 
My tomato, cucumber, onion salad is dressed in basalmic vinegar, olive oil and Cavender's Greek seasoning. Love it.

Love to eat the tomatoes without anything but salt.

Love to eat cucumbers sprinkled only with Cavender's.

Doesn't include the cucumbers, but I saute garlic and onion in olive oil, add sliced squash and tomato and saute for a nice side dish. I'll add Italian seasoning if I remember.

You can buy a cheap "mandolin" or a hand held ceramic blade slicer - just watch those fingers!! It works so fast, I think I got ours at Target - but it makes the thinnest slices for onions (I hate onions, but it totaly makes this salad!) ALSO - when you eat all the cukes from this, you still have that sauce, so slice up more into the sauce!

I buy the balsamic at our grocery store - it has a sour taste to it - I found a store that let you taste balsamic... :love: COMPLETELY won me over!!

so take a plate to arrange, a slice of fresh mozzerella, a slice of tomato, and a sprig of Basil - or take a few basil leaves, roll them up and slice them thin - and sprinkle over that salad - add salt and pepper too!

You can make a simple salad dressing - add 2 T of grainy mustard, or grey poupon and 2T brown sugar, mix, add app 1/4 Balsamic, mix, then slowly whisk in some good Olive Oil (app 1/4 c) I never measure any more btw!! Then you can just drizzle over your tomatoes, or in a bowl of cut tomatoes with some small round mozzerella - FRESH - etc...
