Our garden is coming in with a huge amount of tomatos and cucumbers and a few yellow squash. I need some recipes and ideas on different ways to serve them. Thanks.

Do you think any of these recipes will taste as good with green tomatoes, as mine just won't turn red? We call this Greek summer salad--chunks of tomatoes, sliced cucumbers, sliced onions.Stir it up with olive oil & vinegar dressing and add feta cheese. Yummy! so fresh.
Chop up and put with pieces of fresh mozzarella - pour over with olive oil/balsamic or an Italian dressing.
I make pasta salad all the time w/ black olives, tomatoes and cukes - use tri-color rotini pasta and all I use for the "sauce" is Good Seasonings Mild Italian. I use balsamic vinegar though, and use more vinegar than oil so it's not too oily. Yum!

I was going to suggest this.
They eat this a lot in Bulgaria. One of the things I miss.
They call it Shopska Salata. No way would I call it a Greek summer salad because it's a Shopska!!! LOL!

I make sweet and sour cucumbers.
I start with about 4 cucumbers peeled and sliced VERY thin. To that, I add 2 onions also sliced very thin and cut in 1/4's.
I then add 1 cup sugar, 1 cup of vinegar and about 2 cups of water and let the cucumbers and onions soak for at least 6 hours. After that, my Dh tastes them and lets me know if I need to add more sugar or more vinegar. The longer that they soak, the better that they taste. They've become such a hit with my family that my SIL asked me to bring them to her house for Thanksgiving.
I'm getting ready to make a big batch today so that they'll be ready for my DD's graduation party on Sat.
One warning, use either a glass or metal bowl because it's hard to get the vinegar smell out of plastic or Tupperware.
