Here are a couple recipes I got from "Mr. Food" last month during his healthy cooking week.
No-Fry Honey Chicken
1 cup honey
2 cups cornflake crumbs
1 (2-1/2- to 3-pound) chicken, cut into 8 pieces and skin removed
Salt
Black pepper
Preheat oven to 350°F. Coat a rimmed baking sheet with nonstick cooking spray.
Place honey in a shallow bowl. Place cornflake crumbs in another shallow bowl.
Season chicken with salt and pepper. Dip chicken in honey then cornflake crumbs, completely coating the chicken each time. Place chicken on baking sheet.
Bake 55 to 60 minutes, or until golden and the juices run clear.
(I use boneless, skinless chicken breasts for this recipe. Quick and easy)!

Barbecued Turkey Loaves
Nonstick cooking spray
6 tablespoons barbecue sauce, divided
2 tablespoons water
2/3 cup quick-cooking or old-fashioned rolled oats
2 egg whites, lightly beaten
2 teaspoons chili powder
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1 pound ground turkey breast
1 small onion, finely chopped
1/2 red or green bell pepper, chopped
Preheat the oven to 375°F. Coat a 9" x 13" baking dish with nonstick cooking spray.
In a large bowl, combine 3 tablespoons barbecue sauce and the water. Add the oats, egg whites, chili powder, Worcestershire sauce, and salt; mix well. Add the turkey, onion, and bell pepper; mix well.
Form the mixture into 6 oval-shaped meat loaves, and place in the baking dish; bake for 30 minutes.
Spread the remaining 3 tablespoons barbecue sauce over the tops and bake for 5 more minutes, or until the meat loaves are cooked through and the juices run clear.
