Need help with FP+ choices and a dinner ressie

I have read Mesa's priority list, but I'm still having a hard time with one afternoon for our July trip. I would really appreciate some advice. It will be 4 of us - me, DH, my mom, DD(3).

We are arriving on a Monday afternoon and leaving Saturday morning. Since DD is only 3, we are planning lots of MK time. Monday night, all day Tuesday, Wednesday morning and Friday morning are all MK. My problem is on Friday. We are planning on being at MK for rope drop and hitting Frontierland with no fastpasses and riding Alladin, Jungle Cruise, Pirates, Tiki Room, Country Bear Jamboree, Riverboat then heading to Epcot at lunch.

I have booked our FPs on Friday for Epcot - Spaceship Earth at 12:00, Soarin' at 1:00 and Seas with Nemo at 2:45.

So here is my first question - Do I need a FP for Spaceship Earth and Nemo? or should I switch it to something way earlier to burn them so after we ride Soarin' we can try to pick up a 4th FP for Test track? or something else?

Second Question - We had originally planned to eat dinner at Rainforest at AK but we are going to be done with AK very early, about 1pm. Is there somewhere else we should try to get dinner ressies for that my DD would enjoy? We are already doing CRT and Chef Mickey's earlier in the week.

- what you could do is schedule the first two Fp+ for Epcot before you arrive and let them expire. Then you can ride Soarin' as soon as you enter Epcot and then choose your 4th Fp+, hopefully for TT.

- how about Sanaa at AKL? You can have a great lunch and explore the resort and savannas.
