Pumpkin Fluff

16 oz cool whip
5 oz instant vanilla pudding mix
15 oz can of pumpkin
1 tea pumpkin pie spice mix

mix pumpkin, pudding and spice...fold in cool whip...I served with apples and graham cracker sticks (not gluten free of course)

It was a big hit!
 
There is a recipe on the back of Knox Gelatin for cheesecake that I make pretty frequently. It's gelatin, hot water, cream cheese and sugar. I make it with artifical sweetner and/or a SF Torani syrup (caramel is lovely), so it is an extremely low-carb, low-calorie treat as well.
 
Kitchen Sink Cookies

1¼ cups light brown sugar, packed
1 cup granulated sugar
1 1/3 cups creamy peanut butter
8 tbsp. unsalted butter, at room temperature
3 large eggs
2 tsp. baking soda
½ tsp. vanilla extract
½ tsp. salt
4½ cups quick-cooking oatmeal
1¼ cup pretzel M&Ms½ cup chocolate chips
¼ cup raisins

No pretzels.

Mochi cake--google it. I use a recipe from Epicurious that calls for mochiko (sweet rice flour available at Asian grocery stores) and coconut milk. There are variations--pumpkin, green tea, blueberry, etc. The texture is a little bit chewy. My kids love it.
 
Mousse! Not just chocolate, but there are recipes for many different kinds. My favourite is maple. If you don't want to make it from scratch, there are a few good mixes out there (Dr. Oetker). I also like it because you can just make it in one big bowl and scoop from there, or pretty it up by using individual dishes, whipped cream, chocolate shavings, or whatever.
 
Peanut Butter Cookies
1 cup peanut butter
1 cup sugar
1 egg
Combine all ingredients together and spoon by the tablespoon onto a cookie sheet lined with parchment. Bake at 350 for about 10 minutes. So easy and they taste just like regular peanut butter cookies. I make these all the time and everyone loves them.


I use this recipe for so many things:

Hershey kiss cookies

crust for pies, like banana cream and chocolate cream pie (I make my banana from scratch and use cook and serve for the chocolate) could be uses in many pies as the crust

make them like normal cookies and dip in chocolate and then in crushed peanuts

You could add chocolate chips and make chocolate chip peanut butter cookies

11oz can Mandarin Oranges, drained

Mix together, garnish with toasted coconut if desired.

This sounds great and easy. Has anyone out there tried it with sunflower seed butter instead of peanut butter?

I've done them with almond butter and cashew butter. They were a bit more crumbly than when made with Kraft-type peanut butter, but still very tasty. Not sure if sunflower has a similar consistency to almond or cashew butter, but I'd try it.
