OK Based on the dinner thread I thought we could give this a try. Post a recipe that you like that isn't too difficult. We can all check in and try and find something new for dinner. Even if you made it a million times it may be new to someone else. I just NEED some new ideas.

I'll go first w/ a VERY easy crock pot recipe.

Beef Stroganoff



2 lbs. beef stew meat

1 med. onion chopped

1 can Golden Mushroom Soup

1 can Cream of Onion Soup

1 can sliced mushrooms (or fresh)

8 oz. Cream cheese (cubed)

8 oz. sour cream

¼ tsp. pepper



Throw meat & soups in crock pot

Low 8 hours

2 hours before serving, add mushrooms, sour cream, & cream cheese



Serve over Egg Noodles







*****I couldn’t find Cream Onion Soup, so I used French Onion, still yummy
 
This is a quickie my kids love. I fix a pot of pasta, add a can of chicken, and a can of Campbells Chicken Verde soup and some shredded cheese. It is kind of like a Mexican chicken alfredo.
 
Qick and Easy Lemon Chicken

1 ib. thin sliced chicken cutlets
Garlic cloves
olive oil
lemon juice

Chop up garlic cloves
Place all ingredients into pyrex dish (enough lemon and olive oil to cover the cutlets)
Cover with tin foil
Bake for about 1/2 hour - or until chicken is cooked through

Serve with buttered noodles (with a sprinkle of parmesean) or rice/couscous
 
Everything I cook needs to be EASY and idiot proof. Here are some of my standbys:

Brown pork chops

Place them in a baking dish and cover with one can Cream of Mushroom Soup and one can of Cheddar Cheese Soup (sounds gross but it's good!)

Place thinly sliced potatoes on top, covering the whole baking dish

Bake in the oven until potatoes are done. It ends up being like cheesy potatoes. Yummy and kid friendly.

Another one:

Slice Turkey (or regular) Keilbasa and put in baking dish

Add baby carrots and baby potatoes and sprinkle with a little Italian dressing

Bake until potatoes are done

I serve it with salad and usually green beans
 

Throw 4 - 6 frozen chicken breasts in crockpot. Don't need to separate. Add 1 16 oz container sour cream and 2 cans broccoli cheese soup. Cook all day on low. Just before serving, cook up 1 box rotini and 1 bag of broccoli (the frozen stuff). Shred chicken in crockpot. Add in noodles and broccoli when they are done. Serve.

It is really good and really easy..

What brand is this broccoli cheese soup??? I have not seen this before...
can I substitute it for something else.??
 
One of our faves...

get a rack of pork ribs (about 4 pounds for us). Throw them into the crockpot and cook on low. About an hour before serving, drain the fat and then dump about 1/2 to 3/4 of a bottle of sweet baby rays on them and cook another hour on low. They will just fall off the bone!
Serve with noodles tossed with butter, milk and grated parmasean cheese.

Sooooooo good!
 
Here's one my husband really likes:

6 boneless loin pork chops
1 cup of your favorite barbeque sauce (I like Sweet Baby Ray's Honey BBQ Sauce)
1 6oz. can of crushed pineapple in its own juice.

Put all the ingredients in the crock pot on low for 6-8 or on high for 3-5.

I serve over rice, but noodles are good too.

Simple, but tasty.

My mom does this one, (I think she browns them first in the oven) and she gets rave reviews everytime. My DBF's parents are still talking about them 2+ years after they had them.
 
I love this idea, I'm always running out of ideas.

I don't cook much using a crockpot but I do make this dish every so often, and its delish. The recipe was given to me by a friend who is from the deep South -- they cook with Coca Cola a lot down there. At first I thought "ick!" but its actually VERY delicious!

1 cup Coke
1 cup catsup
1 medium onion, sliced
Whole Chicken (about 1 1/2 pounds)
Wash and pat dry chicken. Salt and pepper to taste.

Put chicken in crockpot and onions on top. Add coke and catsup and cook on low 6 to 8 hours. When cooked place in refrigerator to cool and then skim off the fat. Reheat and eat.
 
This is one of my old standy bys.
Brown a pound of ground Beef, drain and add in Prego Spaghetti Sauce.
Cook a box of Jumbo Shells.
Pour mixture over cooked shells (in a casserole dish) and sprinkle the top with shredded mozzerella cheese.
Bake for about 1/2 hour to 45 minutes at 350 degrees.

Very Good.
 
Chicken Yum

6 Boneless, skinless chicken breasts.
1 can cream of chicken soup
1 stick margarine
6 slices swiss cheese
1 1/2 C Pepperidge Farm Herb Stuffing.

Preheat oven to 325. Mix cream of Chicken soup with a little water and heat slightly until soup is smooth. In another pan melt margarine and add dressing until moist. Use alittle extra margarine if you want extra stuffing.

Place chicken breasts on large, lightly greased cookie sheet. Place 1 slice of swiss cheese on each chicken breast. Pour soup over chicken and cheese and spread. Put dressing mixture over everything and spread it evenly.

Bake uncovered for approximately 1 1/4 hours.

To die for!
 
TACOS

Ingredients:
*1 package of 1 dozen taco shells
*1 jar of Paul Newman's salsa (whichever variety you prefer)
*shredded cheddar cheese
*sour cream
*1 lb. 93% ground beef
* 1/2 or 1 whole vidalia onion
*lettuce & tomato, chopped
*salt & pepper
*chili powder
*hot sauce

Preparation:
*heat saucepan on medium high heat
*preheat oven to 350 degrees
*dice onions
*add 1 TBSP olive oil to pan until hot
*add onions, cooking until they begin to brown and soften
*once the onions are cooking, add the ground beef and saute. Add salt & pepper and 1 TBSP of chili powder. Continue to cook beef, until fully cooked through, separating the beef so it is not in big chunks.
*add 1/3 jar of salsa and simmer for a few minutes (if you like spicy, add a few drops or so of hot sauce)
*while the meat is simmering, put taco shells (on a cookie sheet) into the oven for five minutes to crisp.
*Remove taco shells from oven, and beef from heat.

Put all ingredients on table family style, and allow family members to assemble their own tacos.

Honestly, when I am too tired to cook, I can whip this up in fifteen minutes. It's one of DH's favorites (he's been known to eat a half dozen tacos in one sitting). I think homemade tacos come out way better than they do in the restaurant. And they are so easy, and really, if you limit or eliminate sour cream as a condiment, they are very healthy, incorporating all four food groups.

Chicken Cacciatore

4 to 5 boneless, skinless chicken breasts
1 red pepper, cut jullienne
1 onion
1 large can Hunts tomato sauce (32 oz)
1 (15 oz) can of dice tomatoes, drained
8 oz. of sliced fresh mushrooms
basil
oregano
minced garlic

Cook on Low in crock pot 6 to 8 hours
Serve over Rice or pasta

OR
Germelli with Sweet Sausage and Spinach (30 min. dish for 4)

3/4 pound gemelli or penne pasta
Salt
2 Tablespoons extra-virgin olive oil
1 large onion, quartered lengthwise and thinly sliced crosswise
1 pound sweet italian sausages, casings removed
½ teaspoon crushed red pepper
2 cups coarsely chopped baby spinach (4ounces)
½ pint red grape tomatoes
½ cup freshly grated parmesan cheese

1. In large pot of boiling salted water, cook the germelli until just aldente. Drain the gemelli, reserving 1 cup of the cooking water.

2. Meanwhile, in a large, deep skillet, heat the oil until shimmering. Add the onion and cook over moderately high heat, stirring, until softened, 4-5 minutes. Add the sausage and crushed red pepper and cook, breaking up the meat with the back of a spoon, until no trace of pink remains, about 5 minutes. Add the spinach and tomatoes and cook just until softened, about 3 minutes.

3. Add the gemelli and the reserved cooking water to the skillet and cook over moderate heat, lightly crushing the tomatoes, until heated through, about 2 minutes; season with salt. Transfer the pasta to bowls and sprinkle with the parmesan and serve.

*If you forget to save a reserve of the pasta water, use 1 cup of chicken broth.

Stove Top Chicken Casserole

3-4 Boneless Chicken Breasts
1 Can Cream of Chicken Soup
1 Cup Water
1/2 Cup Italian Dressing
1/2 Cup Chopped Celery (optional)
1 Box Stove Top Dressing

Boil chicken breasts in water for about 15 min. Take out and let cool.

Prepare Stove Top according to directions.

Combine soup, italian dressing, water (I use broth from boiled chicken) and celery (again optional).

Chop chicken into bite size pieces and put in a buttered casserole dish, pour soup mixture over chicken. Place Stove Top on top to cover. Cover dish with foil and bake at 350 for about 1/2 hour. Serve over rice or noodles.
 
This one is super easy and really good.

1 large can of Dinty Moore beef stew
1 bag of No Yolds noodles

Cook the noodles then drain. Cook the beef stew then pour over noodles and stir. Salt and pepper to taste. Is is so good.
 
Creamy Chicken Burritos

3 chicken breast halves cooked and cubed
1 8 oz pkg cream cheese
1 Cup Salsa
1/4 tsp garlic powder
1 15 oz can pinto beans drained
1 1/2 Cup shredded cheddar cheese
6 flour tortillas

Preheat oven to 350. Grease a 9x13 baking dish. Add cream cheese and salsa to large sauce pan. Cook over medium heat until cheese is melted and blended with salsa. Add garlic, beans and chicken. Mix well. Fill tortillas, roll up and place in baking dish. Mixture will be a bit runny so be careful not to burn yourself filling tortillas. Sprinkle burritos with cheese cover with foil and bake 20 minutes. Remove foil and bake an additional 10 minutes. Serve with lettuce, tomatoes, olives etc.
 
This one is tasty and quick - the prep time takes longer than the cooking time! I've substituted chicken for the pork - it works just as well. I'm guessing that beef would do fine too. We serve it over sticky rice.

Honey Nut Stir Fry

1/2 cup orange juice
3-1/2 Tbs. honey
2 Tbs. soy sauce
2 tsp. cornstarch
1/8 tsp. ground ginger
1 Tbs. vegetable oil
1-2 large carrots, sliced diagonally
1-2 celery stalks, sliced diagonally
11 ounces boneless pork chops, cut into thin strips
1/3 cup cashews or peanuts, chopped

Combine first 5 ingredients in a bowl and mix well. Heat half the oil in a heavy nonstick pan over medium high heat. Add carrots and celery and stir-fry 3 minutes. Remove vegetables and set aside. Heat remaining oil in same skillet and stir-fry pork 3 minutes. Return vegetables to skillet. Stir in sauce mixture and nuts. Cook over medium high heat until sauce thickens and comes to a boil.
