One of my faves and super easy - great for company.

smoked gouda and spinach stuffed chicken
in one bowl mix:
1 pkg cream cheese
1/2 can spinach drained
1/2 tsp. Nutmeg
1 cup shredded gouda cheese

take 4 boneless skinless chicken breasts and slice them so you can stuff the inside. Stuff bowl mix into chicken. Place in sprayed pan and top with some butter and salt and pepper.

bake in oven at 425 for 35-45 minutes.


WINE CHICKEN
4 skinless boneless chicken breasts (or more)
1 large onion, chopped into chunks
1 package of mushrooms, sliced
1 package of SHREDDED parmesan cheese
any bottle of white or blush wine

Put onions and mushrooms in a large skillet and lay the chicken on top pour wine into the skillet until it reaches about half way up the chicken (but not covering it) bring just to a boil and reduce heat to a simmer, cook for about 10 minutes, then flip the chicken over and cook for 10 more. Flip the chicken over again and pile the onions and mushrooms on top of the chicken, then place a heap of parmesan cheese (I like a lot) on top of each piece of chicken with the mush and onions on top, cover and cook for about 5 more minutes or until the cheese has melted. serve with wild rice and veggies.

**I used a merlot last time, turned the chicken purple but it was great and the mushrooms were INCREDIBLE!!!


My Favorite Salmon

Salmon Filets
Honey
Yellow Mustard
Crushed Ritz crackers
Chopped pecans

In one plate, mix honey and mustard until your liking. In another plate, mix pecans and crackers. Spray baking dish with Pam and preheat oven to 350. Press each filet in mustard and then cracker mix until fully coated. Place in pan - bake for 10-14 minutes depending upon thickness of filet until cooked.
 
I have a mexican chicken that I like to make in the crockpot.

1 package of chicken breasts, (last night there was 3 in the package)
jar of salsa (I used Newman's pineapple. Gave it a sweet flavor)
and a can of corn.

Let it cook on low all day. Very good. :)

I thought I would try and revive this thread! I need ideas. It is always the same thing at our house. Anyone out there have some really (really really) easy menu ideas/recipes? I would love to impress my hubby 2nite - poor guy, sticks by my medocre & boring cooking too often!
 
DH loves vegetable soup, this is his mom's recipe.

Ground beef
canned veggies (any kind you like)
Tomato sauce (one large can)

Brown ground beef in pot, drain grease. Add veggies (do not drain) and tomato sauce.

Shepherd's Pie

Preheat oven to 350 degrees

1 lb of ground beef
1 can of golden mushroom soup
1/2 can of beef gravy
Mashed potatoes prepared according to package directions (I use instant one or two envelopes)
Grated cheese (I use the colby/monterey jack cheese)

Brown ground beef in large skillet, drain grease. Add canned ingredients and mix together. Transfer to an 8 or 9 inch baking dish. Top with mashed potatoes, add grated cheese. Bake for about 15 - 20 minutes. If you like you can add veggies to the mixture. DH likes a lot of mashed potatoes, so I use two envelopes.
 
"fried" chicken via Oven

Cut up chicken into strips (chunks).......
place 1 c. flour with: 1 packet good seasons seasoning packet

foil lined pan (just for easy clean up).....spray with pam......and place pats of butter all over (13x9 pan)........

Place chicken on top of butter. Bake at 350 for 1-1/2 hour.
 
I've got a great one! So easy and made in the crock pot, which is what I love.

Italian Chicken

2 pounds boneless chicken cut in strips
1 can cream of mushroom soup
4 oz. cream cheese
1/4 cup butter - melted
1 packet 0.7 oz of dry italian dressing mix
1/2 cup white wine

Put chicken in bottom of crock pot. Mix soup, cream cheese, butter and dry italian mix together. Pour over chicken. Top with white wine.

Cook on low all day (6-8 hours)

Serve over angel hair pasta with fresh bread. YUM!!!
 
This thread couldn't have come at a better time....I'm in the middle of making out the weekly menu. Where, oh *where* do you find Sweet Baby Ray's Barbecue Sauce? :confused3 Had never heard of it till reading about it on here a while back. It comes up over and over so I just have to have some! :teeth:
 
Here are two I just made this week for me and my friend's lunch (we take turns each week). I made both of these the same time, and they microwave for reheating pretty well.

Easy fish with spinach

Dump frozen spinach into a glass baking dish. Spinkle with garlic powder. Throw feta cheese on top of the spinach. Throw frozen flounder filets on top and spinkle with more garlic powder then squeeze one lemon all over it. Cover with foil. Pop it in the oven at 350 for 30 minutes or so. That simple and very good.

Easy shrimp parmesan fra Diavlo

Open a jar of sauce and add some garlic powder and crushed red pepper to taste. Throw frozen uncooked shrimp into a baking dish then dump the sauce on it. Cover with mozzarella and parmasian cheese. Cover with foil. Bake at 350 for about 30 minutes or so. Tasty, tasty, tasty.

Now it sounds strange, but we just dumped both of these together to reheat for luch and it was really good!
 
1 pound lean ground beef
4 cups of water
1 bay leaf
1 small onion, chopped
1 clove garlic, minced
4 carrots, peeled and sliced into 1/4 inch rounds
1 15 oz can of diced tomatoes
2 teaspoons oregano
1/2 cup barley, rinsed
2 beef bouillon cubes

Brown ground beef in a large saucepan. Stir in onion and garlic. Cook until onion is tender, about 5 minutes. Stir in oregano, bouillon cubes, water and bay leaf. Bring to a boil; reduce heat and simmer about 1 hour. Add carrots, tomatoes and barley. Cook over medium heat for about 30 minutes until carrots are tender. Remove the bay leaf before serving.

This can be made ahead - it actually tastes even better when reheated.
 
Anyone have any tips on cooking a meatloaf from frozen? (covered or uncovered .....temp & how long?). My meatloaf is 3 pounds........
 
I wish I could say that I could contribute to this...but I'm actually subscribing to all the great ideas. DH and were just talking about needing to change things up a bit. Please keep the ideas coming!!!

Sounds good, I love Sweet Baby Rays on anything!!!!!!!! DD loves it on a hotdog.
 
I hardly know where to start! Fast, easy and good dinners are recipes I collect! Here are some of our families favorites:

Tater Taco Casserole
2 lbs. ground beef
1/4 C. chopped onion
1 envelope taco seasoning
2/3 C. water
1 can whole kernel corn, drained
1 can fiesta nacho cheese soup, undiluted
1 pkg. frozen Tater Tots

In a skillet, cook beef and onion until meat is no longer pink; drain. Stir in taco seasoning and water. Simmer, uncovered, for 5 minutes. Add corn and soup; mix well. Transfer to a greased 9X13 baking dish. Arrange Tater Tots in a asingle layer over the top. Bake, uncovered, at 350 degrees for 30-35 minutes or until potatoes are crispy and golden brown.


Baked Chops and Fries
6 bone-in pork loin chops
1 Tbs. olive or vegetable oil
1/2 tsp. seasoned salt
1 jar (8 oz) process cheese sauce
1/2 C. milk
4 C. cottage fries
1 can french-fried onions, divided
1 pkg. frozen broccoli

In a large skillet, brown chops in oil; sprinkle with seasoned salt. In a bowl, combine the cheese sauce and milk until blended; spread into a greased 9X13 baking dish. Top with cottage fries and half of the onions. Arrange broccoli and pork chops over the top. Cover and bake at 350 for 45 minutes. Sprinkle with remaining onions. Bake 10 minutes longer or until meat is no longer pink and the broccoli is tender.


Sweet-And-Sour Meatloaf
1 egg
5 Tbs. ketchup, dividd
2 Tbs. prepared mustrd
1/2 C. dry bread crumbs
2 Tbs. onion soup mix
1/4 tsp. salt
1/4 tsp. pepper
1 lb. ground beef
1/4 C. sugar
2 Tbs. brown sugar
2 Tbs. cider vinegar

In a bowl, lightly beat the egg. Add 2 Tbs. of ketchup, mustard, bread crumbs, soup mix, salt and pepper. Crumble beef over mixture and mix well. Shape into an oval loaf. Place in a shallow 1-qt. microwave safe dish; cover with waxed paper. Microwave on high for 11-12 minutes or until meat is no longer pink, rotating a half turn once; drain. In a small bowl, combine the sugars, vinegar and remaining ketchup; drizzle over meatloaf. Cover and microwave on high for 3-5 minutes. Let stand for 10 minutes before slicing.

I hope someone can use these and enjoy them as much as we do!

Saucy Forgotten Beef Recipe
2 pounds beef stew meat
10 3/4 ounces can Cheddar Cheese soup
10 3/4 ounces can Cream of Mushroom soup
1 envelope dry onion soup mix


Place beef in crock pot. Mix dry and canned soups together; pour over beef. Cover and cook on LOW for 8-10 hours.



La Jolla Chicken (Chicken with Spinach and Sun Dried Tomatoes)
6 chicken breasts..This
1 tbsp olive oil
3 cloves garlic,minced
1 package spinach
1 cup chicken broth
1/2 Cup sun dried tomatoes
1/2 cup white wine
Parmesan cheese
1) Grill chicken in a large skillet with olive oil and garlic until it gets nice and brown on both sides
2) When the chicken is about half done add remaining ingredients and simmer for about 15 minutes..The wine can be replaced with chicken broth if need be
3) Serve chicken with spinach/sun dried tomatoes on top..Throw some parmesan cheese on top
I put this over orzo.I add some spinach, sun dried tomatoes and wine to the orzo while it cook

CHesy Chicken Broccoli Casserole
6 CHicken breasts cut up in small pieces
1 bag frozen Broccoli
1 lg or 2 smallscans creamed soup..I use cream of broccoli
1 cup milk
1/2 cup mayo
1/2 c sour cream
1 1/2 cups Cheddar Cheese
Bread crumbs

This is another railroaded recipe,meaning I never measure.
1. Combine soups,milk,sour cream , mayo, cheddar cheese in a baking dish
2 Add in chicken and broccoli..I put mine in uncooked,but you could precook or use leftoover chicken
.Sprinkle breadcrumbs all over the top and then toss on some extra cheese
Bake at 450 for about 45 minute,until it's bubbily in the center.
I've made this without the may,without the sour cream. I've made it with different cheese,swiss,gruyere,even velveeta...You can play with this recipe... I like eerything with some kick so I add some crushed red pepper
 
My husband calls this my "bachelorette dinner" (he says guys have "bachelor food" that are the easy stadbys with hardly any prep):

1 Lg. can Dinty Moore Beef stew or chicken stew
1 can beef or chicken broth (match to the flavor Dinty Moore stew)
mix up dumpling dough from the recipe on the side of the Bisquick box

Heat stew and broth together on the stove - add herbs as desired (I like to add a little garlic, some onion, some parsley, and anything on the spice rack that smells like it would work) :)

When the stew begins to boil, drop in the dumpling dough in spoonfuls. Turn the heat down and simmer uncovered for about 8 minutes. Then cover the pot and cook for another 8 minutes or so.

When it is done, the dumplings will be cooked through and most of the liquid will be gone. It ends up being a very thick stew with big dumplings. Major comfort food for me in the winter!
 
Pizza Casserole (not that healthy, but damn good!)

1 lb ground beef
1 box pasta (I like bow tie, but you can use most any kind)
package of pepperoni
package of 2-cup italian blend cheese (or mozz and parm in a pinch)
26 oz jar of your favorite spaghetti sauce

Heat oven to 350 degrees. Brown the beef, mix with the sauce. At the same time, cook the pasta according to the directions on the box.

Mix together the pasta-meat mixture and the pasta and place into baking dish. Top with cheese and pepperoni. I like to mix some cheese and pepperoni into the dish as well.

Bake until the cheese has melted and the peps have crisped. Easy to assemble and bake later. YUUUUUUUUUUUUUM!

It is actually the most requested meal by my DH. He loves the flavor. I like that it can be made year round without heating up my house. I serve it with rice or mashed potatoes and green beans.
