So there is one day that I was considering starting my family at Epcot and then moving to Hollywood studios. Do i have to book the FP+ at the first park I am going to for the day (Epcot) or can I book my 3 passes for Hollywood later in the day even if I go to Epcot first? Thanks.

The limitation (currently) is that you can only book at 1 park per day.

However, if you have park hopper tickets, you can still visit two parks (or more) in a single day.

In short, you can choose to book later FP+s at Hollywood Studios, and start your day with a visit to Epcot. That will work fine.

What you would not be able to do is book 1 FP+ at Epcot and then 2 at Hollywood Studios (as an example).

You can book your initial 3 at either park, but not both. See the green link in my signature for answers to this and other FP FAQs.
