My mother and I are staying on resort property for a night before our cruise and want to take advantage of some of the dining options. I've been to WDW before, she hasn't. I'm an all-out Disney geek, she's far more skeptical but has had a great time at Disneyland with me. I'm looking for a meal that would appeal to somewhat adventurous eaters. Ideally something on the casual end, but a few steps above say the Pop! food court. Has to be a resort restaurant, we're not going to the parks this time. Oh, and she's pescetarian. So, lots of requirements.

I'm thinking either Boma or Kona Cafe. Any preferences between those or other recommendations would be greatly appreciated!
 
I think you picked the leaders in the "casual yet adventurous" category. I'd put Boma a smidgen above Kona...but you'll probably get 50/50 feedback. A girls cruise sounds so fun, have a great time.

First issue for me would be convenience. If you're on Monorail, Kona is an excellent choice, but the exposure to lobby noise may not be the best ambiance.

Boma is also very good, but buffets can be 'too much' for some people; I'd have you consider Sanaa for the daylight animal view. But getting to/from AKLodge can be a bit of effort if using Disney transportation.
 
If your mother is a pescetarian, I would would give the edge to Kona. But I would also add in Flying Fish.
 

Great choices - love both! For a pescetarian, I'd give the edge to Kona (assuming DM eats sushi). But the Boma buffet does have lots of choices, more than a standard buffet would, for her. If you're looking to explore the resort before/after your meal, I'd lean towards Boma/AKL. Not only the animals, but the theming of the lobby is very interesting. Talking to African CMs is fun, and IMO Jambo has the best resort gift shop on site.

Really, you can't go wrong with either! Have fun choosing!
 
Of the two, definitely Boma! I actually don't think Kona is very adventurous and I think the variety and quality of food is better at Boma. Plus the atmosphere in the restaurant exceeds Kona as well. You may also want to consider Sanaa!
 
In your scenario I would go with any of the Animal Kingdom Lodge restaurants: Boma, Jiko, or Sanaa. Not only are they all great meals but you can spend some time on any of the savannahs checking out some animals.
 
I would recommend Fulton's Crab House at DD, Narcoosses at GF, Artist Point at WL and Flying Fish Cafe at the Boarwalk
if you are looking for seafood..
 
I absolutely love Boma! Lots of fun things to try and I have always seen salmon there.
 
We love Boma and the variety there is excellent plus if you ask, the chef there will explain exactly what the ingredients are in each dish. Some of the offerings are very unusual. The setting is wonderful and you can explore the resort and see a large variety of animals.

If you want to spend a bit more and have your dinner served to you try Jiko, also in Animal Kingdom Lodge. It is a deluxe meal but so worth it in our opinion. The Tile fish there is excellent. Here is the menu: http://allears.net/dining/menu/jiko-the-cooking-place/dinner
 
Hmm ... we love Kona, but the atmosphere is a little "blah" for a special one-night dinner experience. I also wouldn't trek over to AKL unless I was staying there. How about BlueZoo or Flying Fish and then a walk along the Boardwalk?

ETA, I just recalled that Flying Fish will be closed in early 2016 for a refurb, so I guess it depends on your timing...
