Need a good meatloaf recipe

I have some lean hamburger that I need to use today and wanted to make a good meatload. Anyone have a good recipe that they love?

I would just like it to be fairly healthy/low fat.

I love to experiment with new foods, so I'm up for anything!

I made it the other night with the recipe on the back of the Lipton Onion Soup Mix and it was delicious. I left out the Keptchup though. :yay:
 
This is actually the recipe from the 50's Prime Time. It is real good! I made it a couple of weeks ago and it was the best ever! I halved things tho. I didn't have a whole pound of ground pork so I improvised and only used a total of 2 pounds of meat and adjusted the other ingrediants accordingly.


2 lb ground beef
1 lb ground pork
4 eggs
1 cup seasoned bread crumbs
½ cup diced onions
1/4 cup diced green peppers
1/4 cup diced red peppers
2 Tbsp worcestershire sauce
Cracked black pepper to taste
Kosher salt to taste (I used regualr salt)
½ cup Meatloaf Glaze (recipe below)

METHOD:

Dice peppers and onions and set aside for later use. Combine meats and seasonings. Add vegetables. Place meat mixture in oiled loaf pan. Bake at 350º F oven for 1 hour (internal temp 155º).

Brush meatloaf with meatloaf glaze. Bake another 10 minutes. Let meatloaf set 10 minutes, cut loaf and serve.

MEATLOAF GLAZE
INGREDIENTS:

½ cup ketchup
1 Tbsp brown sugar
1 Tsp Dijon mustard
½ Tsp worcestershire sauce

METHOD:

Combine all ingredients until mixture is smooth
 
i make mine very simply.

garlic

mix together and bake
 

Following recipe is from Ann Landers and is the only meat loaf I will eat.



2 lbs. ground round steak
2 eggs
1 1/2 cups bread crumbs
3/4 cups ketchup
1 teaspoon MSG (Accent)
1/2 cup warm water
1 package onion soup mix

Optional: 3 strips uncooked bacon
1 8 oz. can of tomato sauce.

Beat all ingredients together thoroughly. Put into loaf pan. Top with 3 strips of bacon if desired. Cover with tomato sauce. Bake at 350 degrees for one hour.

This is the same recipe I usually use. When DH asked for meatloaf the first time I consulted MIL and she told me this is the one she uses. I have tried a couple of other variations. Cooking Light has a recipe for Italian Meatloaf that was very good.
 
Quaker's Prize Winning Meatloaf Recipe

1-1/2 pounds lean ground beef or turkey
3/4 cup Quaker® Oats(quick or old fashioned, uncooked)
3/4 cup finely chopped onion
1/2 cup catsup
1 egg, lightly beaten 1 tablespoon
Worcestershire sauce or soy sauce
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
Directions:

  1. Heat oven to 350°F. Combine all ingredients in large bowl; mix lightly but thoroughly. Shape meatloaf mixture into 10x6-inch loaf on rack of broiler pan.
  2. Bake 50 to 55 minutes or until meatloaf is to medium doneness (160°F for beef, 170°F for turkey), until not pink in center and juices show no pink color. Let stand 5 minutes before slicing. Cover and refrigerate leftovers promptly and use within 2 days, or wrap airtight and freeze up to 3 months.

Ingredients:
1 1/2 pound ground beef
3/4 cup oats, uncooked
1/4 cup onion, chopped
1 1/2 teaspoon salt
1/4 teaspoon pepper
1 cup tomato juice
1 egg, beaten


Directions:

Combine all ingredients and pack firmly into an ungreased loaf pan. Bake in a preheated 350° oven for 1 hour and 15 minutes. Let stand 5 minutes before slicing.
 
This is an awesome recipe from Cooking Light Magazine. I make it all the time.

1 c. boiling water
1/2 c. sun-dried tomatoes
1/2 ketchup (I use BBQ sometimes)
1 c. seasoned bread crumbs
3/4 c. finely chopped onion
3/4 c. fresh chopped basil
1/2 c. shredded provolone cheese
2 large egg whites
2 cloves of garlic, minced
1 lb ground round
1/3 c. ketchup/bbq sauce

1. Combine boiling water and tomatoes in a bowl. Let sit for 30 minutes. Drain and chop finely.

2. Combine all other ingredients (except the 1/3 c ketchup) in a large bowl. Then add the tomatoes. Shape mixture into a 9x5 inch loaf on a broiler pan coated with cooking spray. Spread with the 1/3 c. of ketchup.

3. Bake at 350 for 1 hour or till internal temp reaches 160. Let stand 10 minutes before serving.
 
I just make mine up each time, but I do put oatmeal in it instead of breadcrumbs. It is always SO good. I put the ketchup/brown sugar glaze on it.

I didn't know there was a recipe board. I'll have to check it out. :wave:
 
Yum, I love meatloaf. Funny this thread was here, I was craving it today and too lazy to cook so I got some Stoffers...lol
 
I make a variation of the Quaker one that arminnie posted, except I use a mixture of frozen chopped green peppers, onions, & celery. I also substitute tomato soup for the ketchup. Sometimes if I'm feeling ambitious, I also add more shredded veggies (like zucchini) to sneak in some for the kids.

That sounds good. I have an 85 year old father. I have to sneak in vegetables for him like with a 5 year old. Of course the renal doctor told him to avoid potatoes, tomatoes, and strawberries. So what does he bring home from the store - a CASE of grape tomatoes ($2), a case of strawberries ($3) and ten pounds of potatoes (price unknown). All because it was cheap.
 
And I use dry seasoned (Stove Top) stuffing instead of bread crumbs. I also add a half pound of pork sausage in addition to the ground beef. Doesn't make it very healthy, but it's tasty!
 
I'm not a big meatloaf fan, but I make it the way I do my hamburgers:

worstershire sauce
teriyaki sauce
lipton onion soup mix
chopped onion
garlic
bread crumb
eggs
garlic
garlic powder
onion powder
salt
pepper

was inspired by something we made at work, and I'm tempted to do the next meatloaf using either a packet of taco seasoning or chili seasoning.
