Need a good and easy salad recipe

I am going to a pot luck luncheon on Tuesday and signed up to bring a salad. Anyone know a good and easy recipe? I'm just tired of the same old broccoli salad or seven layer salad.
 
Cauliflower Pea Salad
1 medium sized head of cauliflower, cut up
1 box of frozen peas, thawed
1/2 c. chopped purple onion
1 c. shredded cheddar
1 1/2 - 2 cups Ranch salad dressing
Mix well and chill.

This one makes a ton of salad but it's so good!!!! It really tastes better if it sits overnight in the fridge too.

Macaroni Salad
1 pint Miracle Whip
1 c. white vinegar
1 can Eagle brand sweetened condensed milk
1/2 cup (or less) sugar
1 lb. macaroni
1 green pepper, chopped
3 carrots, grated
1 red onion, chopped

Mix first 4 ingredients. Cook macaroni per package directions. Cool. Add vegetables, dressing, mix and refrigerate overnight.
 
This one is easy if you want a green salad
Any leafy green or red tipped letuce
one to two cans of manderine oranges
one red onion sliced thin
one bottle of Poppy seed dressing.

pour dressing on right before serving! Simple, pretty and yummy!
I have used oranges, pears, dried cranberries, grapes, rasberries...any fruit it good blue berries or a mixture of fruit.... some times throw in a few nuts...
 
How about a spinach salad? I make this all the time, and never share it without sharing the recipe...I got it from allrecipes.com. There are tons of salad recipes there too! :)


Bermuda Spinach Salad
6 eggs
1/2 pound bacon
2 pounds spinach, rinsed and chopped
2 3/4 ounces croutons
1/4 cup sliced fresh mushrooms
1 onion, chopped
2/3 cup white sugar
1 teaspoon salt
1 cup vegetable oil
1/3 cup cider vinegar
1/2 teaspoon ground black pepper
1 teaspoon celery seed
1 tablespoon prepared
Dijon-style mustard


Directions
1 Place eggs in a saucepan and cover completely with cold
water. Bring water to a boil. Cover, remove from heat, and
let eggs stand in hot water for 10 to 12 minutes. Remove
from hot water, and cool. Once cool, peel and chop.
2 In a large salad bowl, combine the eggs, bacon,
spinach, croutons and mushrooms. Toss to mix.
3 Prepare the dressing in a blender by combining the
onion, sugar, salt, oil, vinegar, pepper, celery seed and
Dijon mustard. Blend until smooth.
4 Pour enough dressing over salad to lightly coat. Toss
and serve.
