NBC celebrates Black History month....

I'm not offended! I make fried chicken and collard greens (or as Michael Scott from The Office would say "colored greens";)) It's a Southern thing for sure, but in the north, it's a black thing too!

I never cared for black eyed pease though:confused3

My job, a huge health system, does something similar. Haven't heard any complaints - but I've heard a lot of compliments!
 
I'm a southern gal who could never get the hang of cooking greens.... to let you in on something I learned... if you can find them, Glory Brand collard greens are good (if canned can be good).

Frankly, everything that was on that menu is something almost all southerners eat, as a rule.

So true.:goodvibes I have missed ham in my greens since DD16 became vegetarian. Now I make my greens with vegetable broth and you know what? THey're pretty darn good.:thumbsup2 I can make a 6qt pot of greens and my family will eat them ALL at one meal.

Homemade veggie broth? I haven't found anything commercial that I like, but making homemade broth is a killer.
 
UPDATE II: NBC has removed the sign from the cafeteria and apologized if it offended anyone.

The chef, Leslie Calhoun -- who is black -- said she has been trying to institute a special Black History Month menu for years and was allowed to do so for the first time this year. She said doesn't understand the controversy.

"I don't understand at all," she told NBC partner site TheGrio. "It's not trying to offend anybody and it's not trying to suggest that that's all that African-Americans eat. It's just a good meal. I thought it would go over well."

That sign is very close to what our cafeteria was serving yesterday. They are celebrating BHM. Next week we are having Jamaican food. I forget what the other two are.

Our cook is a AA man.

They also do an Asian month, a Mediterranean month and others.

It is a nice change one day a week.
 
I have been CRAVING fried chicken, mashed potatoes, and collard greens. I really don't see the controversy at all...
 


I think "they" were thinking that "they" were going to enjoy a darn good lunch! I'm so tired of being overly PC. Seems the only ones offended are holier than thou white folks. So ridiculous.
 
I'm waiting for someone to volunteer to bring the collard greens. I've never had any and I want an authentically made recipe. :) :goodvibes

Hey guys, did you also know the the tradition among Black folks is that you make a pot of Black eyed peas on New years day. Legend is that it will bring wealth to your house hold.

So maybe we can get the recession over with if every body stirs up a pot. ;)

my (very racially diverse) university did the same thing this week. they called it "black history month soul food week" they always have week long themed menus on campus, so i don't think this is any different, or offense. :confused3

I don't get it either. Can any black folks on the disboards chime in. Do you like and eat the foods listed on the menu?

I don't personally eat that food, but most Southerners do. It's more of a regional thing than a Black thing.

Never even HEARD of Jalapeno cornbread! :confused3
 
That menu would have made me take a double look...they forgot the watermelon for dessert! I love traditional Southern foods!
