I went to the grocery store today for cat food, milk and light bulbs. I came home with a lot of groceries.
The meat counter at our store can only hold the meat in their case for 24 hours. After that, despite the fact that it's still just fine, they mark it way down. I bought split chicken breasts(bone-in) for. 89 ¢ a pound. I bought 15pounds of these. I also bought 20 lbs. of ground chuck (burger) for $1.01 a pound.
These were great buys for us. Honestly with the price of groceries and gas, I could not pass this up. My mom was with me and she stocked up too. She just froze all of her purchases, but I decided to cook, then freeze mine.
Here's what I did:
1/2 of the ground meat and 3 chopped onions were browned in a pan on the stove. Once cooked and well drained, I added italian seasoning to 1/2 of it. The other 1/2 I left unseasoned. I divided these up into 8~ 1 lb. bags.
With the remaining 10 lbs. or so of ground chuck I made 6 hamburgers, and 5 small meatloaves. I grilled the burgers for dinner. I froze the meatloaves for later dinners. I will take them out the night before and thaw in the refrigerator. I can then top them with sauce for baking and bake.
ground beef totals:
6 burgers for dinner tonight/dh's lunch tomorrow
5 meatloaves, frozen raw for baking later
4 ~ 1 lb. packages of cooked italian seasoned ground beef for spaghetti, etc.
4 ~ 1 lb. packages of cooked ground beef for chili, tacos, etc.
Chicken:
I boiled all of the breasts. Once cooked throughly and cooled, I shredded 1/2 of the meat. I added taco seasoning to that 1/2 and some water to aide in coating the chicken with the seasoning. I divided this into 3 bags for chicken tacos or white chicken enchiladas.
I used 1/2 of the remaining chicken to make a large bowl of chicken salad. I added light mayo, onion, celery, salt, pepper, garlic and mixed this well. We will have this for sandwiches, with salads, etc. over the rest of the week for lunches.
The remaining chicken was diced and divided into 3 quart size bags. I will use this to make various casseroles, etc. over the course of the next couple of months.
Chicken breakdown:
3 bags of mexican seasoned shredded chicken for tacos, enchiladas, etc.
1 large bowl of chicken salad
3 bags of diced chicken for casseroles
I now have meat prepared for dinners, so I can take that step out of cooking after a long day at work. All in all it took 4 hours to prep, cook, and clean up. Honestly, about 2 hours into this I thought I had lost my mind, but it really did go quite smoothly and quickly.
