We are staying for 9 nights with the dining plan and using the credits for Narcoossee's,Jiko,Citricos, Yachtman,and Chefs and will pay for the others. We have been to WDW many times and are going to use the credits for restaurants we have never been to and pay for ones we usually would eat at and pay for.

You don't have to pay for everyone's meal at one restaurant on the plan or out of pocket. You can mix the tab. When the waiter asks at the beginning, just tell them what you're doing before you order, then as you order, tell them exactly who's going on the plan, and who's out of pocket. So keep track of what someone orders. If someone ends up low on the bill, pay them out of pocket. If not, use the plan. You'll have to keep track now, but you could end up way better off doing it this way.

Jiko, in particular, is really reasonably priced for a two credit restaurant. Spoodles and Chef's in particular, are one credit restaurants where you can end up really running up the tab. But Spoodles in particular is one where you can end up with a very low tab too. The credits are pooled so you can choose to oop anyone, at any time. Just remember if someone obviously buys items that are on the less expensive side or isn't quite hungry enough for an appetizer and such, OOP them. When all is said and done, you'll come out better. The Drawback is you'll have to keep track and remember not to end up with an odd outstanding credit when all is said and done. But as long as you go into Chefs with one credit or less for each person, you won't have that problem. And as long as you come into Grand Floridian with 2 credits per person or fewer, you won't have that problem.

Note Grand Floridian Cafe is a prime candidate for out of pocket. So is Jiko.
Yachtsman is not, nor is Narcoosees (everyone gets lobster.)
 
I personally will never eat at Mama Melrose again. It was aweful. The service was great but the food was so bad.
