what are the must do rides in disneyland,universal.We have been to WDW many times now so we are looking for the best rides that are at the california attractions

Any of the rides that were the original E tickets and some new ones.
I actually love it all ( with the exception of Small World ) but if you only have time for a few these are the ones I'd choose:

Pirates
Haunted Mansion
Matterhorn
Space Mountain
Jungle Cruise
Big Thunder Mountain Railroad
Star Tours
Splash Mountain

Plus: Tom Sawyer's Island
Tiki Room
Buzz Lightyear
Peter Pan

California Adventure:
Tot
Soaring Over California
The big roller coaster (can't remember the name)
Grizzly Rapids

I haven't been to Universal in years. Someone else will have to help you out.

I agree with your list, but your forgot 2 rides that can only be experienced at DL/DCA and not at WDW, and so IMHO are also MUST DO's:

Indiana Jones at DL (you can't make a trip to DL and not ride this!)
Monster's Inc at DCA

Thank you Disney Super Mom! I knew I was forgetting something. We have yet to go on Monsters but will definitely be there in April.
 

like the idea of doing rides that are not in florida keep erm comming folks

I've not done Monsters Inc yet, but will be doing that in July. Indiana Jones is a brilliant ride, especially the first time you ride it. Also the queues for Soaring won't be as long as they are at Epcot.
Our favourite rides are:
Indiana Jones
Splash Mountain
Matterhorn
Autopia

And in California Adventure
California Screamin
TOT
Orange Stinger
Mulholland Madness
Soarin Over California.
I have to say that theres no ride that we really dislike, but these are our favourites.

Buzz Lightyear was a favorite of adults and kids (ages 3 and 5). We did that one several times. Soaring CA was fun as we knew all the places, but I wouldn't wait in a long line for it.

There are a few rides that DL and WDW both have, but they have differences, so you should try to go on them:

Pirates (longer at DL)
Haunted Mansion (below ground at DL)
Space Mountain (new & improved at DL)
Tiki Room (not under new mgt like at WDW)
Thunder Mountain (smaller at DL)
Splash Mountain (longer & more characters at DL)
Tower of Terror (different drop sequences)
