So with the monorail shut down...is it safe to assume that I can ride from the grand Floridian to Epcot in the middle of the day? This won't be part of the shut down, will it? We check out on sat am and plan on driving to grand Floridian for breakfast adrs and parking our car there for the day and then hopping on the monorail to get to Epcot and then catching the monorail back to our car that night to leave. Will this work?

as long as the shutdown doesn't effect the monorail resort line as well as the epcot line you're fine.
 
You will need to take alternate transportation from the Grand Floridian to TTC, where you can catch the monorail to Epcot. The Epcot line is unaffected by the current shutdown schedule. Both the Express to MK line and the resort to MK line could be down after 11:30 am on a weekday.

Be careful self parking at the Grand Floridian, it's the worst self-parking lot on property. You might also not be permitted to leave your car there all day as it takes up space that Grand Floridian guests should be able to use. Many times the monorail resorts have a 3 hour parking limit for restaurant patrons who are not hotel guests.
 
On weekends the monorail runs normally.

If you did this on a weekday you would have to take a bus between GF and TTC to get on the Epcot monorail.
