Nell - sorry about the job, but I bet it wouldnt take you too long to count ALOT of blessings in your life....dont say good things arent meant for you...all you have to do is take a look around and its easy to find someone who is FAR worse off than you! You have a home, a loving partner, increasingly good health, good friends and family, cool pets, an awesome new outfit, nice comfortable new dining table and chairs, and the Love of God!! WOW, looks like good things ARE meant for you!! One of the biggest problems I have is PATIENCE...and I know that it is a lesson I am being taught...Ken being away so long is just one of the tests I am facing...its not easy to sit back and wait for that perfect job, but it WILL happen, you just have to BELIEVE!! Love You!!
 
Good morning everyone. I got an email message today that they decided to go with other candidates. I was sure I had this job. I'm trying to be positive and realize god has other things in mind for me. Part of me is thinking that the other things are a life of hardship and struggle because good things aren't meant for me. I know how messed up that thinking is but I feel like I can be honest with all of you.

Pony, I'm glad talking to your friend worked out. It's seems like it was part of god's plan with what has been going on with Dennis.

Kate, I think I read if we have a freeze here to put mulch up around the bottom half of the citrus tree trunks to protect the roots from freezing.

Natalie - LOL, I know I know...I needed the vote but didnt have the time!! It all worked out in the end...nice long chat, forgave each other for way past troubles, caught up on family and friends and agreed to stay in touch as friends!!

Kate, other posts suggest if your muffin is "eggy" to make sure you beat the egg and melted butter really well. I make sure I do this, and it doesn't have any "eggy" taste.

Thanks for the suggestion. I am so slow sometimes. I didn't think about melting the butter. I did beat the egg better today and I used half flax seed and half almond flour. It came out much better!

Kate, try some coconut oil for the 'butter' if you have any. It was great when I did that with some poppy seeds and lemon extract.

Good Morning! Cold as heck here still, but at least no snow like Kathy is contending with! I was too tired to post last night, decided to be a good Pony and go to sleep instead, and it looks like nobody else was up either? Hope y'all are doing Christmas stuff and having fun!

I was going to try the micro muffins on Sunday...of course cocunut oil is NOT an option (YUK), but will I be ok if I use the flax, melt my butter, and whip the butter and egg together well? They sound so good, but it was a little scary to hear Kate didnt like hers!

Anybody out there taking extra potassium? I read it helps to lower BP plus regulate insulin if you take one 99mg supplement pill a day...just wondering!

Did I mention how much I LOVE step 1? :lmao:

Lord knows what sort of office temptations will be thrown before me today...seems everyone wants to "share" whatever they are baking at home!
 
Good Morning Robin, Guess everyone else is busy. Christmas is 2 wks from today! :eek: I better get busy myself.

Glad to hear you are getting more rest. The fact that you are sleeping so much says it's what your body needs. We get so busy that we don't pay attention to the messages our body sends.

I finally tried the muffins this week and they are pretty good, seems like the possibilities for flavorings are endless and if you don't care for one, you haven't wasted much in ingredients or time. You do need to whip the egg & butter really good. I used almond flour (ground up some almonds) and flax mixed. Amazes me that they cook in 1 minute.

Think I've heard that about potassium too. I have a problem taking pills and I conveniently forget to take them.

I think I remember something about you and Step 1. :rotfl: :rotfl:
It does seem much easier to manage than 2 and I'm sure if we make good choices of legal foods and have some of the 5x5's, we get plenty of carbs. It is easier to just eat something every 5 hrs, 'specially when our lives get so hectic.

As for the office food, you just have to visualize the ugly, globs of fat they contain. As my Mother always said, "Get behind me Satan!" I can still hear her voice when I'm tempted, makes me laugh and get through.

Good morning. It is raining a little so maybe that means our cold weather has moved on?

They figured out that my niece got a staff infection from her dialysis port. She is on lots of steroids for her lungs and that means her immune system isn't what it should be. So, they took out the dialysis port and have upped the antibiotics. She is very weak but she is a fighter so that is good. I can't believe it but she has been in the ICU for 4 weeks as of tomorrow.

I made it through a holiday party last night and just ate legal foods. They had a turkey and roast that they were slicing. Yummm! And lots of veggies and dip. Oh, I just remembered - I ate one meatball that probably wasn't completely legal but I guess that was better than the cookies and fudge!

Nell -sorry to hear abut the job. Your pity party was allowed yesterday, but today is a new day. Sometimes it is hard to remember that God does answer our prayers, but sometimes we don't like the answer. He has something much better in store for you, so just hang on until you find what it is! :hug:

Kate - it sounds like you did a great job at the party, and continuing prayers for your niece. I am glad they found the problem. :yay: Sometimes that is more than 1/2 the struggle.

Kate: Great job on resisting the temptations at the office party! We have a party tomorrow and I’m thinking of bringing some appetizers to make sure we have some choices. The Hostess said she didn’t need anything, so is it ok to show up with stuff anyway?? Barb was looking for stuffed mushrooms recipes and I found a really easy one with Stoffers Spinach Souffle. You just put that in the mushroom caps, add parm and bake for 20 minutes. I thought the soufflé would be high in carbs but it’s only like 8 or 9 for ½ cup so you could eat quite a few of them on any Step. I think I might make some right before we go to the party so they stay warm. Robin, you can hold the yuk comments! My Mom had a legal recipe, too, but it’s a lot more ingredients. I took deviled eggs to my office party and they gobbled them up. I might make a batch of those too. There will be a lot of hungry men there, lol! Weigh in on whether or not that is rude, ok??

You can’t really taste the coconut oil if you use it in the muffin, Kate. I couldn’t anyway and I have a keen sense of smell, too. It’s really much healthier than butter too.

I’m glad they found the source of your niece’s infection. There is so much risk of infection in hospitals! As if she didn’t have enough to deal with. Hopefully, the antibiotics will kick in really soon. Bless her heart.

Beverly - how does that work? You can start the car while you are still in the house so it is warmed up? That would be really nice on a cold, cold morning. I love my seat heaters! They get warm before the heater does.

I have been meaning to ask you - have you found the soy beans locally? I looked at my Whole Foods but they didn't have any.

I've never made them before so without tasting them it's gonna be hard to know whether they're worth giving away :confused3 Hubby will be my tester even though he's picky. If it's not chocolate chip he'll be negative. Oh well, it's the thought that counts and the cookie eaters can deal with it :laughing:

Thanks for the opinion, Kate! I found the black soy beans at Raleys in the natural food section right next to the organic black beans so you have to look very carefully. They are delicious!

Barb, the visual of this will probably make you sick, but here goes: when I cooked for Thanksgiving and needed to taste something, I put it in my mouth long enough to make sure I had the right spices, then I spit it out into the sink and rinsed my mouth out!:lmao:

P.S. Frozen fog scares me to death! The boys are driving home for Christmas from Portland, partly because my nephew is on a tight budget and partly because the planes were grounded last year. I will be biting my nails!

I walked into the office to a huge platter of cookies and danish...so here I am visualizing huge globs of fat stuck to my hips and hearing a little voice in my head saying "Get behind me Satan!!"

Barb - 17 degrees? OMG, and I was complaining when I woke up to 25 degrees!! I dont think it has ever been this cold in Virginia since I moved here!

Lisa - I would definitely bring something...not rude at all! Especially if your hostess has any idea you are on a restricted diet...are you freezing there still too? I actually had a big bunch of gorgeous yellow Irises that decided to bloom about 2 weeks ago...should have taken a picture they were so beautiful...but they are decidedly DEAD this morning! Laughed when I read your description above...I have been doing the SAME THING!! LOL

:rotfl: Actually, that doesn't make me sick. I've done it before and I can do it again, just hadn't thought of it. Once when doing Atkins I tasted some pasta to make sure it was al dente and spit it out :rotfl:
