They have in the past. Just check the Navigator you get at check in for where/when to sign up. It's usually on the second page under "Adult Activity Highlights"

Thank you PrincessSchmoo! I was finally able to find a Navigator with the same itinerary as ours and see that they do offer them. The adults in our group missed out on the seminars last cruise when we were on the Fantasy. Traveling with my sister sans kids this time around so I'm making sure we add a couple on our must do list!
