Mixed off-site/on-site stay- fast pass recommendations

So, I'm very excited that we'll be taking our first family trip to Disney (DH and I both went as children, but never together). It will be DH, in-laws, DD 2-turning-3 and me. We have 6 park days from Dec. 31, 2017-Jan 5 2018. We are thinking of doing MK day 1 or 2, but doing it at least 1-2 more times when we stay at the Contemporary on Jan. 2nd for DD's b-day (other than that we'll be off-site). SO, my question is, knowing that I'll have 60 days to make fast pass reservations for Jan. 2-3, but only 30 days for our first MK day, does anyone have any recommendations on what rides I really should try to book 60 days out? She will be around 35-6 inches tall, so we'll be focusing a lot on Fantasy Land, but maybe a little in Adventure Land and Tomorrow Land. We probably will also only do half/ 3/4 days in the parks as she still takes an afternoon nap and we're not trying to overwhelm her by pushing her all day.

In FantasyLand, I'd try for FP+ for Peter Pan (for some reason there is always a stupidly long line here) and 7DMT (if she's tall enough). Maybe Winnie the Pooh, too. The "usual headliner" FP+ at MK for my family are Splash Mountain, Space Mountain, and either BTMRR or HM, but it doesn't sound like these will be your cup of tea for this trip!

I wonder... once your 60 day window opens, will you be able to book FP+ for your earlier, off-site days? Someone should know- and if not, once your 60 day window opens, it'd be worth trying to book FP+ for the earlier days, just in case it's possible!

When your 60-day window opens for your January 2nd Stay, it includes all the offsite park days for the first part of your trip. Book for those days when your window opens.

When you go in to the parks on the 4th-6th, you can book 60 days out for each of those days because you will benefit from your FP booking window rolling forward.

I had no clue either! My first few days are offsite and I didn't think I would be able to book fast passes for those days so I hadn't planned any at all. Then when my 60 day window opened up I realized I could book for those other days as well, I was super excited!
