Mister Disney and the K-man's Easter Sunday V&A Chef Table Review

We had the great pleasure of watching the entire process of making the truffles eggs. AMAZING! The Chefs started with a couple of dozen eggs that they used a tool on to cut the top off the eggs, but not break the rest of the shells. After pouring the contents of the egg into a bowl, they saved all the shells.

At this point an egg custard is made and poured back into the egg shells, which are place in a water bath to cook in the oven. All seemed to be going along swimmingly, until the unthinkable happened. While placing the waterbath full of the egg shells and custard into the oven....the water "sloshes" and corrupts the custard in the eggs. They had to start all over again!

I was blown away at the amount of work that went into each of the truffled eggs, and the taste exuded that energy. On top of the egg custard are slivers of more mushrooms. It was a perfect combination of flavor, textures and aromas.

Our hearts sank when that poor chef realized all of his hard work sunk like the Titanic. He truly worked his brains out!

Note to self: We have to get one of those little egg shell cutters. They are amazing. I'm not sure what we'll do with it, but we need to have one!

I need one too! It can sit on the shelf with my collection of wacky egg cups that I never use.

OK .. I'm back!

The sauce was a reduction of all the drippings. It was truly wonderful. In fact, I turned to Joseph to ask for a roll to wipe it up, and he handed me a sauce spoon and reminded me .... DESSERTS!

ARRRRRRRRRRgh! I love love love Morel mushrooms! I remember when I was 4 and we lived in Indiana we would go pick them in our woods (and yes...there were MORELS, not magic mushrooms). I tried to buy some online and they can go for up to $100 a pound! Insane!

omg! pass me the bread to mop up the drool from my keyboard! this is the best food review ever... and we're nowhere near the DESSERTS!!!!

Yes, I did have the wine pairings, but I am SO bad with that sort of stuff, since I am not a wine drinker, I felt it was best to leave that out of this report. I would say you ABSOLUTELY should do the wine pairings though. Israel and Mark are excellant at pairing the wines!

Since we're both bad at the wine stuff, we decided to concentrate on taking pictures of the plates that were put in front of us. Perhaps you remember the pictures from last year's chef's table. If you look closely, we dove into the food and then stopped each other ... WAIT ... THE PICTURE! Fork Marks! Quick ... turn it around, no one will know.

Now ... I can tell you anything you want to know about the Grand Marnier in the souffle. :stir: :rotfl2:

I just found this report today! I said, hey Tom want to hear about A&V chef table at Easter, he replied "oh thats right, Mr Disney was going". My Disney what have you done o my husband? Its like you are a celebrity in our house. And of course you are now getting me into trouble, I wanted to eat at the chefs table then said no, I was afraid we wouldnt like the food, now after reading this so far, Im starting to think yes, BUT i think we are too late. BAD MR DISNEY !LOL
 
My goodness I didn't realize there were so many courses at the chefs table! You guys are the best...I've cried, I've laughed and I've hungered after reading your reviews! Can't wait for dessert!
BTW, the lilac festival on Mackinac is a lovely time to visit...and if you have DVC you could use your points to stay at the Grand Hotel. (but you probably know all this!) Maybe you could arrange a private viewing of a movie at the theater at Mission Point hotel which is where they filmed the scene from the movie Somewhere in time when Jane Seymour is acting at the theatre?? I once had a private viewing of a movie there...just two people (and the projectionist!) in this really old movie theater...pretty neat! No way as romantic as this thread - can't top Mister Disney and the K-man on that!
