I'm getting ready to download the Lyft app for our upcoming trip. Are there any coupons that can be applied to this app to use MinnieVan?

Any Lyft promotions you have can be applied to MinnieVan. Just be aware that most of their promotions are only applied $5 per ride.
The same is often true with Uber -- both companies want you to take multiple rides.

My recommendation, as a driver for both companies, is that every adult in your party put both apps on their phones. That way, you can take turns ordering rides and maximize the promotional savings.

There is nothing on WDW's website that says you can't use Lyft's coupon especially payment is done through the app and not directly to Disney.

I totally agree with this. Both companies offer promos throughout the year. If you have never used one app or the other often a hotel concierge has discount coupons too. While in Kansas City 3 years ago I got a $50 credit, max was $10 per trip.
