We are doing a split stay off site and on site day tickets. If we purchase Memory Maker will it be good for all of our days in the park or only the days we are staying on grounds.

all of your days. You do not have to be on site to get and use memory maker, though the magic bands do add to the convenience factor. You dont need magic bands for it but if you have them you can use them for scanning even on your offsite days.

Thanks. The website makes it sound like you do. It says:
"To add Memory Maker, you must first have a Magic Your Way Package (room and theme park tickets)"
However; it will later let you add with just a room reservation.

We got the memory maker on our last 2 trips not because I wanted the downloads, because I create an album on the Disneyphotopass site. But, I got the memory maker because I wanted the ride photos as well (which didn't use to be included in the photopass). I was a little upset when my friend told me that the ride photos were included in her photopass and she didn't get memory maker. I guess I don't need to pay the extra money for it now..
