Meal suggestions for those staying in Condos/Homes

I was going to post as "those that stay off-site", but I remembered that DVC resorts have kitchens too!! So for those who prepare some meals for their families, I would love to hear your recipes and suggestions. I have only stayed off-site and I like to make quick meals for my family to help keep costs down. My favorite standby is a couple of rotisserie chickens and a bagged salad. In my case, Walmart does the cooking for me :laughing: I have considered taking my crock pot this trip since I really wont have anything to carryon except my purse. ;) So if anyone has any recipe ideas and suggestions, I would love to hear them. We are DVC and have a few meals that we prepare in our villa. Mostly we bring stuff for breakfast and sandwiches, but we do have a few "cooked" meals.

Spaghetti - jarred sauce, box of noodles, loaf of french bread.
Quesadillas / burritoes - canned refried beans, shredded cheese, salsa, soft tortillas (can be used for wraps for "sandwiches")
Macaroni and tomato juice (family tradition - boil macaroni, drain it, add tomato juice and heat again)

We've also gotten salad makings and then picked up grilled chicken from counter service at our resort (or at a grocery, etc.). Instant rice, instant potatoes are also easy to make. Rice comes in such a variety now that you can pick up whatever flavors your family enjoys and bring them in your suitcase.

Of course there are always hot dogs, burgers, baked potatoes, etc.

4 -5 boneless skinless chicken breasts
1 (15 1/2 ounce) can black beans , drained
1 (15 ounce) can corn , drained
1 (15 ounce) jar salsa
4 ounces fat free cream cheese
4 ounces nonfat sour cream
Directions:
1 Place all ingredients except cream cheese and sour cream in crock pot.
2 Cook on low 6 hours or on high 4 hours.
3 Last 45 minutes add sour cream and cream cheese.
 
We rent a beach house for two weeks every summer. Not exactly the same as a Disney condo...but some things may help.

Pasta w/ garlic shrimp and brocolli
beef & bean chilli w/chips and toppings
grilled chicken w/caesar salad
tacos
grilled veggie & chicken/beef kababs w/rice and salad
burgers, hotdogs, corn on the cob, pasta salad
sausage, peppers, onions on italian bread
salmon & veggie foil packets for grill w/ baked potato

I try to make things that
-only have a few ingredients..and the ingredients can be utilized for other meals
-the kids will eat
-can be helped out by grilling (the meats can marinate in a ziplock bag all day in the fridge) or cooking in one big pot or frying pan
