ME for only the return trip?

Our flight comes in just before 10pm and I think it will be easier to have a car service pick us up rather than waiting for a bus to fill up to take us to the resort. Last time we did ME we waited an hour on the bus.

Is it possible to only use ME to go back to the airport?

Nope, you are fine. As a courtesy, you can call them and tell them you do not plan on using ME going from the airport, so for planning purposes, they don't need to be looking for extra people that don't appear.
