Does any1 know how to go about obtaining a marriage license thru the mail?? Our DFTW is at the end of Feb and I heard we could get the license thru the mail instead of driving to the courthouse.

Yes! As long as you are not a Florida resident, you may apply by mail by filling out this form and either faxing, mailing or emailing it back to Brevard County. (County marriage licenses are good anywhere in Florida.)

Then they'll send you the official form, which you and your fiance must sign in the presence of a notary and send back to Brevard County. And then they'll send you the license to give to your officiant on the day of the wedding.
 
FYI- I emailed the form and received a response within a matter of hours. After I mailed in our notarized forms, we received our license in the mail pretty quickly. I was very pleased with their service.
 

Can you apply by email/mail through this form if you're not US citizens? I'm not sure we'll have a weekday free to go in person to get a license during our trip without adding a day at the beginning so this would be awesome.

There have been some reports of UK couples not getting their licenses back in time, but Canadians don't seem to have much trouble. I think the trick when mailing from the UK is to use regular post, not any kind of special or rush delivery—people who do that don't seem to have as many problems.

Gay marriage isn't legal (or recognized? Possible?) in Florida at all. :-( So it would be a merely symbolic wedding in Disney. The actual marriage would have to take place in a State where it was.
