Making sweet potato fries

i make my 21 month old son these all the time!

i peel them, cut them into strips or circles, pam the baking tray and lay them in single layer. bake. about 400 for 25 minutes or so.

 
I peel mine, boil for 2-3 minutes, then spread on cookie sheet, spray with pam, and sprinkle w/ salt/pepper, and bake. YUMMMY!!!:goodvibes
 

I peel mine drizzle with olive oil and sprinkle generously with garlic powder and pepper and salt (not too much of that though). Yum, soooo good.
 
We LOVE sweet potato fries. Sometimes I take sweet potatoes and and an equal amount of Idaho's and peel them, slice them in thick (think steak) fries, Pam a baking sheet, spread them out, drizzle or spray a little olive oil on the pieces, sprinkle with salt/pepper and bake til tender. It's a nice presentation with the two type of potatoes mixed together.:thumbsup2
 
I think you need to peel them. Sweet potato skins are tough. I don't find them to be edible at all.

I don't know. I have made sweet potatoe fries with and without the skins. I have had them at restaurants and from the frozen food section with or without the skins too. Just like regular potatoes. I guess it's just a personal preference thing.

Either way they are good to me. :)
 
we peel ours, than use a peeler to make slices and then fry them in peanut oil, then we sprinkle them with sea salt, they are so YUMMY
 
we always leave the peel on. I also eat the peel when we bake sweet potatoes too. It's good for you and not tough if you cook them right.
