Making a roux.....

Thanks guys. I am making a homemade mac & cheese next week, so I'm going to see if anything different happens if I sprinkle the flour in instead of just dumping it in.

Just wondering if you used margarine instead of butter. I could see the water in that evaporating too fast.
I agree with the previous posters, lower the temp, it dries out quickly on high heat. It should look like wet sand when you add your liquid.
