Our SW flight is supposed to land at MCO at 7:45 pm, on a Saturday night.

If I let ME move our luggage, what time will it likely show up at our room at AKV?

Last time we used it, it took 6 hours. It is possible that we'd be getting a knock on our door at 2 a.m.?

To prevent that, tell bell services to hold your luggage until the morning and put the Do Not Disturb sign on your door.

Maybe, but you should always pack everything you'll need for the first 24 hours in your carry on. Trust me, airline do misdirect luggage.

Disney tries to get you your luggage within 3 to 4 hours of you checking in at your resort. The time you land doesn't factor.

I agree with everyone else's advice. Don't plan on getting it early. Pack what you need for the first 24 hours in your carry-on, and let the desk know to hold your checked bags until you call down for them.
