Magical Express Ride to the airport

We are checking into the Hyatt the night before - can I take the ME to the airport?? But what do I tell them what flight I am on ?? THanks

For returning to MCO, ME will pick you up at your resort approx. 3 hours prior to your flight time. So choose a flight that would line up with the time you'd like to go to the Hyatt, even if it's not flying to your home airport.

It may be hard to find a flight late enough to suit you. Even if you can find a 9pm flight home, they will pick you up at 6pm. That might be earlier than you would choose to end your time at WDW so it may or may not be worth it to hire a private transfer.

I believe the OP is staying at a WDW resort, but is going to head to MCO the day before their 'official' checkout...then stay at the Hyatt that night and get an early flight home.
Completely doable. Just call DME and let them know that you need to be at MCO at such and such time...explain that you aren't flying out that night. They should be able to give you a time that works for you.
