Hoping someone can help!
Our flight is supposed to arrive at 9:17 pm (Air Tran, I have never flown with them before, so no idea how on-time they generally are.)
I know that after 10pm, we have to pick up our luggage.

1) Should we just skip the yellow tags and pick up our luggage? How close to that 10pm window do they call it? (I have been on flights where we waited more than 30 minutes for luggage to hit the conveyor belts....)

2) If we do use the yellow tags, I know it takes a while to get to our room. Is there a cut off time for when they would actually deliver it to the room, and just hold it until morning? (Not really sure I want them knocking on our door at 1am with two little ones.)

Thanks for the help-- we added a night to our package after the fact because it freakishly saved us $400 on flights, even including the extra resort money, but I didn't think about the DME issues!

I think at that time I would get my own bags, if ME did get them they probably would be delivered to your room rather late.
Airtran is located on the B side of the terminal, so after de-planing (on level 3), head to the B side baggage claim (on level 2). After you get your bags, take the elevator to level 1 and follow the signs to ME checkin.

If you are concerned about your bags being delivered too late, just tell bell services to hold them until the morning and put the "Do not disturb" sign on the door.

At the All Stars and Pop Century, Magical Express baggage delivery to your room stops at 10 PM. At other resorts bags may be delivered later unless you ask that they not be.

The 10 PM window for getting your bags from the airport carousel yourself afterwards is hard and fast. If you used the yellow tags then you would be unable to get your bags yourself before 10.

I heard AirTran moved back to A to be with Southwest.

I think I would pick up my bags before getting on the DME. I like to get to my room and unpack on my first night so waiting for the bags to be delivered would bug me. The 20 minute or so delay would also be worth knowing that my bags actually made it to MCO.
