If I have a 7 day Magic Your Way basic pass, can I use 2 days to go to 2 different parks on the same day?

No, that won't work. The only way to see two different parks in one day is with a park hopper.

I don't think you would want to,if you do this without Park Hopper option you would use 4 days from your 7 day pass.

msmayor is correct: You cannot do that.

danny: There are two reasons why someone might want to do that: First, they may already have the passes, with more days than they feel they're going to need. Second, believe it or not, a 7 day pass without park hopping is less expensive than a 6 day pass with park hopping (not by much, but it is).

The computer system that Disney uses will not allow the same non-hopping ticket to be used for 2 different parks on the same days, simply because it would be cheaper to buy a 10 day ticket for a 7 day trip and use 3 extra days to hop!!!

Actually, there is a way to do it, I believe.

If you have unused tickets from prior years that don't expire, you could use 1 day from ticket 1 and use 1 day from ticket 2... obviously, with the MYW pass you need to buy the 'never expire' option if you plan on using them in the future, but that is a way to do it I believe.

Experts, am I interpreting it correctly ?

You can do this if you are applying completely different passes for admission to each park, surely.
