I'm attending a luau-themed holiday party and we're all bringing a dish. Anyone have a low-cost, easy recipe they can share? I've never really cooked anything Hawaiian! Can be a main dish or dessert.

Here's a recipe for haupia (it's sort of like coconut jello). It's pronounced how-PEE-uh. :) It's a pretty popular dessert in Hawaii. Here's the recipe that I use.


Haupia

3 cups water
1 1/2 cups coconut milk
1/2 cup + 2 Tbsp. cornstarch
1/2 cup + 1 Tbsp. sugar (or to taste)

-In a medium saucepan, combine all ingredients. Mix well to dissolve the cornstarch. Place on low heat and cook until thickened, stirring constantly. Remove from heat and pour into an 8x8-inch baking dish. Chill until set. Cut into squares. Makes 12 pieces.

This recipe is from the Polynesian Resort and it turned out quite well when I made it for a dinner party.


Honey-Coriander Chicken Wings
Ohana Restaurant, Polynesian Resort (2006 Orlando Sentinel)
Yield: Serves over 10 as part of an appetizer selection.

4 pounds chicken wings and drummettes (remove wing tips)
1/8 cup wing seasoning (see note)
1/2 cup coriander wing sauce (see note)
2 tablespoons canola oil
Sesame seeds and watercress for garnish

1. Heat oven to 400 F.
2. Put chicken, wing seasoning and oil in large bowl. Mix well. Place chicken on nonstick, foil-lined cookie sheet. Bake until thickest part of the chicken reaches 165 F.
3. While chicken bakes, warm coriander wing sauce. Toss cooked wings in sauce and serve hot. Garnish with sesame seeds and watercress.

Wing seasoning: Combine 2 tablespoons Kosher salt, 2 tablespoons ground paprika, 2 tablespoons sugar, 1⁄2 teaspoon ground black pepper, 1⁄2 teaspoon turmeric, 1⁄2 teaspoon ground cinnamon, 1⁄2 teaspoon granulated garlic and 1⁄4 teaspoon cayenne pepper.
Coriander wing sauce: In nonstick pot, simmer 1 tablespoon chili powder, 1⁄2 teaspoon ground ginger, 1 tablespoon lime juice, 1 tablespoon ground coriander, 1⁄2 cup soy sauce and 1 cup honey. Mix 2 tablespoons cornstarch and 1 tablespoon water. When mixture begins to thicken slightly, add cornstarch mixture. Stir until sauce thickens nicely.

Here are a couple of recipes for kalua pork (also called kalua pig). Think of it as the Hawaiian version of pulled pork.


For the oven:

OVEN KALUA PIG

3 lb pork butt
1 1/2 teaspoons liquid smoke
2 1/4 teaspoons Hawaiian salt, or sea salt, or kosher salt

-Preheat oven to 350-400 degrees F. Pierce pork butt all over with carving fork or score with a knife. Rub salt and liquid smoke into meat.

-Place pork fat side up in a roasting pan or deep casserole dish. Cover and roast in oven for 2 1/2-3 hours. Remove the pork from pan and shred with two forks. Makes six servings.



For the slow cooker:

SLOW COOKER KALUA PIG

3 lb pork butt
1 1/2 teaspoons liquid smoke
2 1/4 teaspoons Hawaiian salt, or sea salt, or kosher salt

-Pierce pork butt all over with carving fork. Rub salt and liquid smoke into meat.

-Cook in slow cooker on low for 16-20 hours turning once. Remove meat, shred, and then add juices from slow cooker to shredded meat. Makes six servings.

Fruit with Pina Colada Dip

2 (6 oz) containers French Vanilla yogurt
1 teaspoon rum extract or dark rum
3 Tablespoons flaked coconut, toasted
2 Tablespoons finely chopped pineapple, or crushed pineapple, drained

assortment of fresh fruit, cut into bite size.

Mix all but 1 Tablespoon coconut together in a bowl. Serve immediately, or cover & refrigerate until serving.

to serve, top with remaining coconut, and arrange fruit on platter.


Tropical Fruit Muffins

muffins
3-3/4 cups all purpose flour
1/2 cup sugar
5 teaspoons baking powder
1 teaspoon salt
1-1/4 cups butter flavor or regular shortening
2/3 cup diced dried mangoes
2/3 cup diced dried pineapple
1-1/2 cups milk
2 eggs
topping
1/3 cup all purpose flour
1/3 cup sugar
1/4 cup finely chopped macadamia nuts
6 Tablespoons butter or margarine, softened

Heat oven to 400. Line 24 muffin cups with liners. Mix together dry topping ingredients in bowl. Add butter, mix with fork until crumbly. Set aside.

In a large bowl mix dry ingredients together. In small bowl, combine eggs & milk; beat well. Pour over flour mixture. Mix with fork just until dry ingredients are moistened. Do not over mix, will be lumpy. Spoon into lined muffin tins. Fill about 3/4 full. Top each evenly with topping mix.

Bake 400 for 15-20 minutes or until toothpick comes out clean. Serve warm.

Recipe can be halved.
