I was diagnosed with diabetes last June and have so far been able to control it with diet and exercise. (It's hard!!)
We leave in a month and I am looking for any tips/ideas on how to stay low carb. Appreciate any help.

This might be able to help you out. Low Carb Dining at WDW :)

This, taken from WDWIG, is Disney's recommendation on what to do -

"Disney's Recommendation for Those with Special Dietary Needs: Let the person taking your Priority Seating (1-407-WDW-DINE) information know of your special needs -- they will make a note on the file. If you are staying at a Disney resort hotel -- Go to your Guest Services Desk and let them know what your specific needs are (a minimum of one hour in advance) and they will call the restaurant for you. The more specific and individual your needs are, the more lead time the restaurant will require... so you may want to call the day before. If you are staying off-property, call the restaurant via the WDW switchboard (1-407-824-2222) at least 24 hours ahead and let them know your needs."

The special-request process can be particularly helpful for low carb desserts. But for entrees and such, the good news is you can eat just about anywhere! :) It's just like eating out at home - if your steak comes with a baked potato, request mushrooms or veggies instead. If you want a cheeseburger, ask the CM to "hold the bun." That's really IMO one of the best things about low carb vs. low fat - you don't have to seek out very specific menu items prepared in a specific way to stay on your "diet." :) You might also want to check out the WISH board here on the DIS - there are lots of people on Atkins and other low-carb plans.

It's also quite easy to find good salads at WDW and the buffets normally have plenty of low carb choices too!

Thank you for the great link! I'm on Atkins now, and it will really help me when we're in WDW !!! (Hopefully, I'll still be doing Atkins then!)

DH has been on low carb for three trips now. CM are wonderful with substitutions. I didn't know about that link and haven't looked yet but Whispering Canyon at WL is great for a low carb dinner if you get the skillet. You should learn more about the restaurant before you go because it is loud and some people don't like that (we love it) but it's all smoked meats with rubs (not sauces).

I would think 'Ohana would be good for you, too, with all that meat and shrimp!! They have a good honey-lime salad there, too!

I would think Ohana's would be an excellent choice. Maybe some other people can confirm this. A lot of meats cooked on an on stage fire grill. Steamed vegetables and salad are two of the appetizers. Excellent place to dine! Great food!

bare in mind too that youll be very very active on this trip and wouldnt store as many carbs as you might at home. so i wouldnt worry about carbs in sauces and such like you might at home. avoid the bigs ones like pasta and i bet youll be fine.

Whispering Canyon's all-you-can-eat skillet:

BBQ from Flame Tree in AK (some carbs in sauce probably and of course discard roll from sandwiches):

Cobb Salad at Brown Derby (get it as an entree):

Teppanyaki has many offerings (just don't eat rice or noodles and be wary of sauces, which come on the side):

Cape May Clam Bake (again, choose wisely):

And as others have said, 'Ohanas...smoked turkey legs from the parks...any of the breakfast buffets...any of the steakhouses.

Good luck and happy low carb eating!!!

Thanks so much for all the suggestions. I can't wait to put them into practice!!!:)
