Low Carb Suggestions

My DW (of whom I am very proud) has lost 70 pounds eating a low carb diet. Can anyone suggest some good quick service restaurants to visit while we are at the different parks that either offer low carb selections or will let her make substitutions or special requests?

WDW is loaded with meat! Meat, meat, meat everywhere. You should not even have to eat a carb the whole time.
 
Counter service eateries may or may not have low-carb alternatives. Sit down eateries, if you have a PS, can and do have alternate low-carb items. With the PS, call about a day before your PS, and notify them that you would like to have any and all low-carb alternatives ready (give them your scheduled time). They will then have advance notice to prepare whatever you want for the most part. This includes desserts, since they can and do use fresh fruits instead of sweetened items. Most also have sugar-free ice cream (while not exactly low-carb are still lower in carbs than regular). The key is to call them in advance so they have time to prepare. We had very good experiences when we were at WDW in January.
 

I maintained a low carb diet last Feb at WDW. Here's a couple places I tried: At AK I ate at the Flame Tree Barbeque, you can order ribs without any sides. At Pecos Bills in MK I got a burger, discarded the bun, and filled up at the toppings bar with mushrooms, peppers and onions. The buffet dinner at Hollywood and Vine in MGM is loaded with meats.
I didn't go without desserts either, just went for sugar free ones. At Epcot they have a delicious chocolate mousse (Norway) and sugar free cheesecake (Fountain View Bakery).
The turkey legs are very good. And in the France Bakery you can get a cheese plate for a snack.
 
Almost every counter service restaurant has their version of a grilled chicken salad. You can also ask for burgers or chicken strips to be served without fries. It'll even save you some $$. I stocked up on Atkins bars for snacks and breakfast and brought along small bags of nuts. We had cheese back in our room and carefully packed a sharp knife and a tiny cutting board in our checked bag.

Congratulations on your DW's weight loss! Even if she gains back a few pounds it's easy to get back on track when you get back home :).
