I have an anniversary trip planned May 1-5 and getting a little worried about a lot of refurbishments hitting just before our trip especially in Magic Kingdom. First time just me and my hubby with no kids so really excited about doing attractions with just us.

Just today - Space Mountain closed for 4 days in late April. Also, Thunder Railroad closed until 4/30 (just a day before we arrive). I know the Jungle Cruise will be closed while we're there and Pirates is set to close 5/11.

Should I be worried about anything closing earlier or running over? Is Disney pretty good about keeping closures limited as to what they schedule for refurbs?

You shouldn't be worried at any rate ... But it looks like the only thing that will be closed during your dates is Jungle Cruise. I've never heard of them starting a refurb before the scheduled date and, though I guess it's possible for a refurb to run over its schedule, it actually opens early sometimes.

The short refurbs are usually on time because they are only fixing one or a few small things. The longer refurbs have more potential to run late.

Don't know why, but IMO, it's a trend that appears to be cost driven on Disney's part. In many, many years gone by, I was told that there use to be an army of maintenance staff that would descend upon the Magic Kingdom every night, painting and doing routine maintenance. There was never this ongoing multiple attraction closures that we are seeing today at the Magic Kingdom. I don't believe the army exist anymore. Also, in a small part, extra magic hours hamper maintenance as well. Cutting back on maintenance staff is an easy way to cut cost, but it definitely detracts from the customer experience.
