Going on a cruise out of Galveston in Jan with my in-laws and we have two cabins. We are Gold but this is their first cruise. Our booking window for excursions opens 90 days. Can I book for them at this time as well or do we just need to wait until their window opens to make sure we can select the same activities?

Unless you have a gold castaway member in their cabin, you will have 2 separate booking windows.

My family is split between platinum and silver. I place a platinum member in each cabin to be able to book everything at the same time.

Ouch. Ok, may look at changing the names. Is this booking window the only disadvantage? Can’t think of another one off the top of my head but could easily be forgetting something.

Online checkin to get the same PAT and boarding group. Doesn’t matter as much if you are using DCL transportation to the port.

Question - we have done the same thing for our upcoming cruise in Feb on the Wish. How do you manage it when you get on ship? Are you able to move folks around?

I don’t think it matters once you are on the ship. Only for booking excursions is my understanding.
 
It will matter for room keys, since we have our couples split by Castaway Level
Great point, which may be enough for me not to mess with it. Can’t imagine there will be that many sold out excursions in the 15 day difference. I’m

Guest services just gives extra room keys. It is kinda a pain to keep up with 2 keys! But it’s worth it for the free palo and to book everything at the same time.
 
We switch people all the time. Usually works just fine. Yes, carrying an extra card can be slightly annoying, but especially when it is platinum with 1st time cruisers, the benefits are huge.
 
Another bonus of splitting the Gold Castaway members between cabins is double the Castaway member gifts! Once you're onboard guest services will have no problem issuing another card for each room. We've done that plenty of times, without any difficulty.
