What are the lines like in early Feb?

Is it best to stay away on weekends?

We got the 5 days for 2 tickets, and they have to be consecutive days. We would like to begin there, but we are arriving on a Thursday, therefore most of our 5 days would be over the weekend period.

What do you recommend? Is Disney more busy over weekend than Universal?

February isn't too bad crowd wise, with the exception of President's Day weekend. Satudays tend to be the most busy and Sunday and Mondays tend to be the least busy. Disney, especially the Magic Kingdom, always seems more crowded than any other park.
